ARTICHOKE NIBBLES

Steps:
- 1. Preheat oven to 325 degrees. Drain one jar of marinade artichoke hearts into medium skillet, add chopped onion and saute for 5 minutes. Discard second jar of marinade. Chop artichoke hearts into small pieces.
- 2. In a separate bowl combine eggs, breadcrumbs,salt,pepper. Fold in cheese and parsley. Add artichokes and sauteed onions mixture, and blend well.
- 3. Pour into 9 inch greased glass baking dish. Bake 30 minutes. Allow to cool briefly before cutting into squares. (Can be served cold).

Steps:
- 1. In a small skillet, sauté onion and garlic in oil until tender. Stir in artichokes. Remove from the heat; set aside.
- 2. In a large bowl, whisk the eggs, parsley, salt, pepper, oregano, and hot pepper sauce. Stir in the cheese, cracker crumbs, and artichoke mixture.
- 3. Pour into a greased 11- x 7- x 2-inch baking dish. Bake, uncovered at 325º for 25-30 minutes or until a knife inserted near the center comes out clean.
- 4. Cool for 10-15 minutes before cutting into 1-inch squares. Serve warm.

- Saute onion & garlic until limp. Beat eggs, add bread crumbs, salt, pepper, oregano, tabasco and cheese. Mix together with chopped artichokes. In Pyrex pan bake at 350 for 30 minutes until set when touched. (you can freeze, if so thaw & reheat after frozen at 325 for 10 to 12 minutes).

- Chop artichokes and set aside.
- Heat oil, add onion and garlic and saute until onion is limp, about 5 minutes.
- Combine eggs,breadcrumbs,salt, pepper, oregano and hot sauce.
- Fold in cheese and parsley.
- Add artichokes and sauteed onion mixture, blending well.
- Pour into a greased 9 inch square baking dish.
- Bake for 30 minutes.
- Allow to cool slightly before cutting into 1 inch squares.
- * May be prepared a day or two ahead and reheated 10 to 12 minutes.
