EASY POTATO ASPARAGUS SOUP
A yummy quick cooking soup. You can sub broccoli for the asparagus, if you prefer. The recipe is from "Better Homes and Garden's Christmas Comfort and Joy".

Steps:
- Heat oil in a large sauce pot, add onion and cook over medium heat until tender.
- Add flour and stir to coat onions.
- Add asparagus, milk, broth, potatoes, salt and pepper, increase heat to medium high and cook until thick and bubbling, stirring often.
- Reduce heat to low, cover and simmer, stirring ocassionaly, 10-12 minutes or until vegetables are tender.
- Add cheese, tomato and sour cream and simmer until cheese is melted.

- In a small bowl, stir together the sour cream, chives and lemon juice. Season with salt and white pepper. Cover and refrigerate until needed to blend the flavors.
- Heat the olive oil and butter in a soup pot over medium heat. Add the asparagus and onion; cook and stir until onion is soft, about 5 minutes. Add the garlic and thyme, and cook just until fragrant, about 1 minute. Stir in the flour until smooth, then gradually whisk in the chicken stock to avoid causing lumps. Add the potatoes and bring to a simmer. Simmer over medium heat until potatoes are tender, about 20 minutes.
- Puree the soup in a food processor or blender, or use a stick blender in the pot. Return to the pot and bring to a gentle simmer. Season with salt and white pepper.
- To serve, ladle soup into warmed bowls and garnish with a dollop of the chive sour cream and a few chunks of crabmeat. Garnish with additional chives if you have extra.

- Break off bottom part of each asparagus stalk, and discard. Coarsely chop the rest of stalks, leaving 12 or 16 of the flower ends whole. Put butter or oil in a large, deep skillet over medium-high heat. A minute later, add asparagus and tarragon, raise heat to high, and cook, stirring occasionally, until nicely browned, about 10 minutes. Remove whole flower ends; set aside.
- Add stock and some salt and pepper; bring to a boil, reduce heat and simmer until asparagus is very tender, about 10 minutes. Cool at least a few minutes.
- Pour soup into a blender, in batches if necessary, and carefully purée. Return to pan, and, over medium-low heat, reheat gently. When soup is hot, adjust seasoning. Put 3 or 4 asparagus flower ends in each of 4 bowls; ladle in soup, and serve.

- Trim and discard any woody stalks of the asparagus. Cut the asparagus into 1-inch wide pieces and set aside.
- Prepare the Soup: Heat the olive oil and butter in a large soup pot over medium-low heat. Add the leeks and onions, and a large pinch of salt. Sauté over medium heat for about 10 to 12 minutes, or until the leeks and onions are very soft and beginning to become translucent. It is OK if they gain a tiny bit of color.
- Add the asparagus and potato and continue cooking for another 3 to 4 minutes, stirring often. Add the chicken broth and bring to a boil. Lower heat to a simmer and continue cooking, with the pot partially covered, for an additional 15 to 20 minutes, stirring every now and then, or until the asparagus and potato are cooked through and extremely tender.
- Transfer the soup (you’ll most likely need to do this step in batches) to a high-powered blender and puree until smooth. Transfer the pureed soup back into the soup pot. Season to taste with a squeeze of fresh lemon juice, kosher salt (*be generous), and freshly ground pepper. Keep over very low heat until ready to serve.
