'CHINESE BUFFET' GREEN BEANS
Every time my family and I go to a Chinese buffet we make a bee line for the green beans! This is a simple and tasty re-creation of that much loved side dish, goes well with any Asian meal. Make sure to slice the garlic, don't use a garlic press. Oyster sauce can be found in the Asian section of your grocery store, at an Asian grocery store, and online.

- Heat peanut oil in a wok or large skillet over medium-high heat. Stir in the garlic, and cook until the edges begin to brown, about 20 seconds. Add the green beans; cook and stir until the green beans begin to soften, about 5 minutes. Stir in the sugar, oyster sauce, and soy sauce. Continue cooking and stirring for several minutes until the beans have attained the desired degree of tenderness.

This is a nice side dish to any German entree, especially pork. It can be made in the crock pot, or on the stovetop.

- 1. Place all ingredients in a small crock pot including some of the bacon drippings (optional).
- 2. Cook on low 6-8 hours.
- 3. The longer the beans cook, the more flavorful they are.
- 4. This recipe can easily be doubled.
GERMAN GREEN BEANS
This is not one of my family recipes although it might have been. I found it in a library cookbook some time ago, and it intrigued me enough I had to try it. The sweet-and-sour flavors will remind you of good old German potato salad. This is a unusual and good side-dish. Try serving it with cold cuts.

- Cook beans in boiling salted water until just tender; drain reserving liquid. Cook bacon until crisp; drain, reserving fat.
- Return 2 tablespoons bacon fat to skillet. Blend in flour and sugar. Add vinegar and 1 cup bean liquid (adding water if necessary to make 1 cup). Cook, stirring constantly, until mixture is thickened and comes to a boil. Add onion, dill seeds, salt and pepper and cook for a minute or two.
- Combine green beans and potatoes in saucepan. Add sauce and heat just until potatoes and beans are hot, stirring occasionally.
- Serve at once, or keep warm in oven until mealtime. Spoon into serving dish and top with bacon.

- Place beans in saucepan and cover with water,bring to a boil.Cook,uncovered for 8 to 10 minutes,drain and set aside.
- In a skillet,cook bacon over medium heat until crisp.Remove to paper towel. Drain,reserving 1 Tablespoon drippings.
- In the same skillet,saute onion on drippings until tender.
- In a small bowl,combine the cornstarch, mustard,and water until smooth. Stir in onion.Bring to a boil cook and stir for 1 to 2 minutes or until thickened.Stir in brown sugar and vinegar.Add the beans,heat through, top with bacon.

- Rinse the meat, pat dry with paper towels and cut it into bite-sized pieces. Cut bacon into small pieces. Then peel and cut the onion and garlic cloves into smaller pieces. In a large pot heat the oil over medium - high and brown the meat chunks. Add bacon and brown for another minute. Then add onions, followed by garlic and sauté for 3 minutes, stirring continuously. Stir in 200 ml (1 cup) water, then bring to a boil and reduce the heat. Let simmer for 30 minutes. In the meanwhile peel and cut potatoes into small pieces and soak in water. Cut off the ends of fresh greens, then cut in the middle and soak them in water.
- After 30 minutes, remove the potatoes and beans from the water and add to the pot. Stir in the remaining 400 ml (1 ½ cups) water. Bring to a boil and let simmer for 15 minutes. Season with salt, pepper, chili and cook for another 5 minutes. Garnish with fresh parsley, if desired and serve.
