AUNT GINNY'S BEAN SOUP

I first got this bean soup recipe with a bag of the dried beans and the recipe as a neighborly Christmas gift.It's similar to other 15 bean soup recipes, but the ingredients are a little different. My boys all love it and it's become a staple whenever we have a bone-in ham.If I'm using a ham bone I'll start this the day before and simmer the ham bone with the water for about 2-3 hours. Then I remove the ham bone and refrigerate it and the stock separately. The next day I'll skim off the congealed fat and proceed with the soup.If you don't have a meaty ham bone you can double the amount of packaged diced ham.I usually double the recipe as the soup freezes well.Prep time does not include soaking time for beans or preparing the stock.

Aunt Ginny's Bean Soup image

Steps:

  • Wash beans and add water to cover 2 inches over the beans.
  • Soak overnight.
  • Drain and put in a 6-8 quart pot.
  • Cover with 2 quarts water, or use the ham stock made the day before (you may want to use chicken or vegetable broth if you didn't use a ham bone to make a stock).
  • Remove meat from ham bone and dice, discarding any fat.
  • Add the remaining ingredients and the meat removed from the ham bone and bring to a boil.
  • Lower heat and simmer for 3-4 hours, or until the beans are tender.
  • Sometimes I will add about 1 T chili powder to the soup for a change of pace.

1 (20 ounce) bag 16 bean soup mix (or you can make your own mixture by using an assortment of dried beans, peas, and lentils.)
1 ham bone, with some meat attached
1 (12 ounce) package of diced ham (I use the Hormel brand)
2 large onions, diced
2 bell peppers, diced
4 -5 stalks celery, diced
1 (28 ounce) can diced tomatoes
3 garlic cloves, minced
1 bay leaf
1 lemon, juice of
salt and pepper

Barbecue 15-Bean Soup image

Steps:

  • Set aside the soup mix seasoning packet and put the beans in a large colander.
  • Pick through the beans to remove any debris, then rinse under running water.
  • Put the beans in the slow cooker, cover them with water, and soak for 8 hours.
  • Pour the beans back into the colander, discarding the used water, and rinse under running water.
  • Return the beans to the slow cooker and add 1 quart of fresh water.
  • Add the barbecue sauce and chopped onions, stirring to mix.
  • Cover and cook on low 10 hours or until beans are tender.
  • An hour before the soup is done, add the seasoning packet and stir.
  • Just before serving the soup, season it with salt and pepper.

VEGETARIAN 15 BEAN SOUP

I wasn't willing to trust the bean soup seasoning packet to be vegetarian so this is the seasonings I came up with. I'm a "pinch here, pinch there" cook so you may need to adjust the seasonings to your taste. When cooking the beans, make sure they are tender before adding any acidic ingredients like tomatoes or lemon juice.

Vegetarian 15 Bean Soup image

Steps:

  • Soak beans overnight, or at least 8 hours. Drain and rinse.
  • Cook beans in water until just tender by simmering on the stove in 2 qts. water for 1 1/2 hours. (Can also cook in slower cooker or pressure cooker.).
  • Shortly before the beans are done, saute onion and garlic in oil until slightly brown.
  • When beans are done, drain half the cooking water.
  • Add all remaining ingredients and simmer, uncovered, for 40-60 minutes, stirring occasionally. Adjust seasoning to taste.
  • Serve with crusty bread or popovers.

1 7/8 lbs 15 bean soup mix (I use Bob's Red Mill 13 bean soup mix, 29 oz bag)
1 quart low sodium vegetable broth
1 tablespoon olive oil
1 large onion, chopped
1 garlic clove, chopped
2 celery ribs, thinly sliced
2 carrots, thinly sliced
1 (15 ounce) can diced tomatoes, undrained

15! BEAN SOUP!

I like bean soups since they're cheap, easy to make, and healthy comfort food. I've never made 15 bean soup before this, but I loved the way this one turned out so I had to post it so I wouldn't forget. It ended up being a combination of things I had around and wanted/needed to get rid of...either way, this is yummy! I didn't add the meat off the bone, but if you like it...feel free! Great for cozying up when it's cold or watching football (or hockey!).

15! Bean Soup! image

Steps:

  • Presoak beans overnight, or boil them according to package.
  • Combine all in crockpot.
  • Cook on high 6-8 hours, or until beans are soft.
  • Remove ham hocks/bone (strip meat off and add back to soup if desired) and bay leaves.
  • ENJOY!
  • Could also be done on the stove top by simmering all on low for 3-4 hours (until beans soften).

5 Bean Soup With Brown Rice image

Steps:

  • Hydrate beans according to package instructions.
  • Add beans and rice to slow cooker and cover with water (about 2 inches over top of beans).
