FRESH SOUTHERN PEACH COBBLER
I've been experimenting with cobbler for some time and this recipe is the final result. Loved by all. Use fresh Georgia peaches, of course!

Steps:
- Preheat oven to 425 degrees F (220 degrees C).
- In a large bowl, combine peaches, 1/4 cup white sugar, 1/4 cup brown sugar, 1/4 teaspoon cinnamon, nutmeg, lemon juice, and cornstarch. Toss to coat evenly, and pour into a 2 quart baking dish. Bake in preheated oven for 10 minutes.
- Meanwhile, in a large bowl, combine flour, 1/4 cup white sugar, 1/4 cup brown sugar, baking powder, and salt. Blend in butter with your fingertips, or a pastry blender, until mixture resembles coarse meal. Stir in water until just combined.
- Remove peaches from oven, and drop spoonfuls of topping over them. Sprinkle entire cobbler with the sugar and cinnamon mixture. Bake until topping is golden, about 30 minutes.

- 1. Combine peaches, sugar and lemon juice. Pour mixture into a buttered 8-inch square baking dish or casserole dish. In mixing bowl combine flour, oats, sugar,nuts, and spices; cut in margarine till it looks lie small peas. Spoon this mixture over peaches evenly. Bake in 375^ oven for 40-45 minutes. Cut into squares. Serve warm or cool topped with homemade ice cream, if desired.
AUNT VERA'S FRESH PEACH COBBLER
This is one of my Aunt Vera's recipes that has been passed down and is an oft requested dish from my kids because Aunt Vera used to make it for them to have after school. It is simple, quick and delicious. You can serve this hot or at room temperature and it is REALLY good with a dollop of peach ice cream or some Cool Whip.

- Preheat oven to 350 degrees.
- In a 9 x 13 inch baking pan, place the stick of butter and put it in the oven to melt.
- While the butter is melting, mix the Bisquick, milk, sugar and almond extract.
- Once butter has melted, pour the liquid mixture over the butter and place the chunks of peaches on top of the batter.
- Return this to the oven and bake for 45 minutes at 350 degrees.

- Drain peaches, reserving 1/2 cup syrup. Drain apricots, reserving 1/2 cup syrup. Cut apricots in half; set fruit aside. , In a large saucepan, combine the sugar, cornstarch, cinnamon, nutmeg and reserved syrups until smooth. Bring to a boil; cook and stir for 2 minutes or until thickened. Remove from the heat; stir in butter until melted. Stir in peaches and apricots. Transfer to a greased 8-in. square baking dish. , For topping, in a large bowl, combine the flour, sugar, baking powder and salt. Add egg and butter; mix well. Spoon over fruit.
