APPLE LOAF

With a large abundance of apples on hand all year round, here is a recipe that is tender and has a delicate apple flavor.

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease one 9x5 inch loaf pan.
  • Mix together flour, baking powder, soda, salt and nuts.
  • In a large bowl, beat margarine, sugar and 1 egg until smooth. Beat in second egg, and stir in vanilla. Stir in shredded apples. Pour flour mixture into batter; stir just until moistened. Spread into prepared pan.
  • Bake for 50 to 60 minutes, or until an inserted toothpick comes out clean. Let stand 10 minutes, then remove from pan. Place on a rack to cool.

I was with a friend at a bed and breakfast in Vermont last year and the gentleman that owned the hotel served this with our tea when we arrived. It was so delicious I asked him for the recipe and he emailed it to me.

Steps:

  • Oven at 350 degrees. grease a 9x5x3 bread pan. Mix dry ingreds. in small bowl. In large bowl beat the butter,sugar and 1 of the eggs til smooth.Add the second egg and beat well. Stir in vanilla and cinnamon. Stir in apples, raisins and nuts. Put dry ingreds into wet ingreds. until just moistened. bake 50-60 mins. or until toothpick inserted comes out clean. Let stand 10 mins. and remove from pan and cool on rack. ENJOY!!!

AUTUMN APPLE LOAF

This is the best ever! I make this for everyone. I got this recipe when I bought a loaf pan. This recipe was under the Baker's Secret label. My goodness.....how I love this apple bread! It's best when it is warm with cinnamon sugar sprinkled on top. Yummy!!

Steps:

  • Preheat oven to 350 degrees.
  • Mix flour, baking powder, salt and soda. (Nuts if desired).
  • In a large bowl, beat butter, sugar and 1 egg until smooth.
  • Add second egg and beat well.
  • Stir in vanilla and a dash of cinnamon. (I add more than a dash).
  • Stir in grated apple.
  • Pour flour mixture into batter.
  • Stir only until moistened.
  • Scrape into greased loaf pan.
  • I sprinkle lots of cinnamon sugar on the top.
  • Bake 50-60 minutes or until inserted toothpick comes out clean.
  • Let stand 10 minutes, then remove from pan.
  • Place on rack to cool.
