Steps:

  • Heat the oven to 180C/160C fan/gas 4. Line a 12-hole muffin tin with cupcake cases. Beat the butter and sugar together using an electric whisk until the mixture is light and fluffy, scraping down the edges to combine. Gradually beat in the eggs and vanilla.
  • Fold in the flour and pumpkin spice, followed by the milk, and combine until you have a smooth batter. Using a tablespoon, divide the mixture between the cupcake cases, around two-thirds full. Bake for 12-15 mins - they should be firm to the touch and slightly golden brown. Cool in the tin for 5 mins, then lift them out gently onto a wire rack and leave to cool completely.
  • Meanwhile, make the cream cheese icing. Using a stand mixer or electric whisk, beat the butter, icing sugar and pumpkin spice mix together until it turns smooth and pale, about 1-2 mins. Add the soft cheese and whisk for a further 3-4 mins until it thickens - it will turn runny and then thicken up again.
  • You can either put the icing into a piping bag and pipe it in a circle on top of the cooled cupcakes, or spoon it on top of the cupcakes and swirl it with the back of a spoon. Dust with extra pumpkin spice, if you like.

Steps:

  • 1. Position a rack in the center of the oven and preheat to 400˚F. Brush the insides of 12 to 14 muffin cups with softened butter, then brush the top of the pan.
  • 2. Sift the flour, baking powder, cinnamon, ginger, nutmeg, and salt together into a medium bowl. Beat the butter in the bowl of a heavy-duty stand mixer fitted with the paddle attachment on high speed until creamy, about I minute. Gradually beat in the sugar and continue beating, scraping the sides of the bowl often with a silicone spatula, until the mixture is very light in color and texture, about 5 minutes. Gradually beat in the eggs. Reduce the mixture speed to low. Beat in the pumpkin; the mixture may look curdled. In thirds, beat in the flour mixture, scraping down the sides of the bowl often, and mix until smooth. Add the raisins. Increase the speed to high and beat until the batter has a slight sheen, about 15 seconds, no longer.
  • 3. Using a 2 1/2 inch-diameter ice-cream scoop, portion the batter, rounded side up, into the prepared cups. Sprinkle the tops with the sunflower seeds.
  • 4. Bake for 10 minutes. Reduce the oven temperature to 375°F and continue baking until the tops of the muffins are golden brown and a wire cake tester inserted into the center of a muffin comes out clean, about 15 minutes more.
  • 5. Cool in the pan for 10 minutes. Remove the muffins from the pan and cool completely.

Softened unsalted butter, for the pan
3 2/3 cups pastry flour, sifted
1 tablespoon plus 1 teaspoon baking powder
1 teaspoon ground cinnamon
1/4 teaspoon ground ginger
1/4 teaspoon freshly grated nutmeg
1/4 teaspoon fine sea salt
8 tablespoons (1 stick) unsalted butter, chilled and cut into 1/2-inch cubes
1 1/3 cups superfine sugar
4 large eggs, at room temperature, beaten
One 15-ounce can solid-pack pumpkin
1 cup seedless golden or dark raisins
1/4 cup hulled unsalted sunflower seeds

Steps:

  • Preheat an oven to 375 degrees F (190 degrees C). Grease 24 muffin cups, or line with paper muffin liners. Sift together the flour, 1 teaspoon cinnamon, nutmeg, ginger, clove, allspice, salt, baking powder, and baking soda; set aside.
  • Beat 1/2 cup of butter, the white sugar, and brown sugar with an electric mixer in a large bowl until light and fluffy. The mixture should be noticeably lighter in color. Add the room-temperature eggs one at a time, allowing each egg to blend into the butter mixture before adding the next. Stir in the milk and pumpkin puree after the last egg. Stir in the flour mixture, mixing until just incorporated. Pour the batter into the prepared muffin cups.
  • Bake in the preheated oven until golden and the tops spring back when lightly pressed, about 25 minutes. Cool in the pans for 5 minutes before removing to cool completely on a wire rack.
  • While the cupcakes are cooling, make the frosting by beating the cream cheese and 1/4 butter with an electric mixer in a bowl until smooth. Beat in the confectioners' sugar a little at a time until incorporated. Add the vanilla extract and 1 teaspoon ground cinnamon; beat until fluffy. Once the cupcakes are cool, frost with the cream cheese icing.

  • Pumpkin Cupcakes with Cream Cheese Frosting. If you’re a fan of carrot cake, I think you’ll love this recipe. Both have fantastic color and lovely warm spices, plus plenty of delectable cream cheese frosting on top.
  • Peanut Butter Cupcakes. Fall means cold weather and deep flavors. More often than not, I want something that will make me feel cozy, and nothing is more comforting than salty-sweet peanut butter.
  • Perfect Vanilla Cupcake Recipe. Finding the perfect vanilla cupcake can be tricky, especially since we all have our own preferences. But if you ask me, this recipe is pretty close!
  • Lavender Cupcakes With Lavender Frosting. Lavender is a fragrant ingredient you can enjoy all year, and that color makes it particularly Instagram-worthy.
  • Chocolate Fall Leaves on Cupcakes. Chocolatiers can make some pretty incredible things using chocolate, and if you’ve ever tried to work with it, you’ll know it’s a challenge.
  • Strawberry Lemon Cupcakes. These light and bright strawberry and lemon cupcakes might be the most adorable on the list. They’ll have a charming and 50s sort of vibe, and I just love how simple they look.
  • Graveyard Halloween Cupcakes. Halloween cupcakes are some of my faves, mainly because it doesn’t take a lot to make them look incredible. Take this recipe, for example.
  • Boston Cream Cupcakes. Boston cream is my favorite kind of donut. Between the fluffy donut, cream pastry cream, and smooth chocolate, it hits all the right spots.
  • Bleeding Black Cupcakes. I’m kind of obsessed with these cupcakes. Halloween is one of my all-time favorite holidays, and I love black in general. You’ll need black cocoa for the cupcake, which will alter the taste a little but not too much.
  • Chocolate and Vanilla Mummy Cupcakes. With the proper piping tip, you can make a batch of these mummy cupcakes in a flash. All you need to do is pipe lines over the top from one side to the other, making them a little random.
