Kale and Chorizo Soup image

Steps:

  • In a large stock pot, heat the olive oil. When the oil is hot, add the chorizo and onions. Saute the mixture for 2 minutes. Add the garlic and potatoes and cook for 2 minutes, stirring occasionally. Add the stock and kale and bring the liquid up to a boil. Stir in the bay leaves, thyme and crushed red pepper. Season with salt and pepper. Reduce the heat to a simmer and cook until the potatoes are fork tender, about 30 minutes. Remove from the heat and skim off any fat. Stir in the parsley. Ladle the soup into shallow bowls and garnish with the fresh mint. Serve the soup with crusty bread.

1 1/2 pounds chorizo sausage, sliced in 1/2-inch slices
1 cup chopped onions
2 tablespoons minced garlic
2 large white potatoes, peeled and diced
3 quarts of chicken stock
4 cups kale, rinsed, stemmed, and cut into 1-inch strips
2 bay leaves
1/4 teaspoon dried thyme
Pinch of crushed red pepper
1/4 cup finely chopped parsley
6 tablespoons chiffonade of fresh mint
Small loaf of crusty bread
2 tablespoons olive oil

This recipe is a quick version of a wonderful soup I had in Mystic, Conn., a Portuguese community nestled by the sea in New England. This soup is a winter wonder.

Portuguese Chourico and Kale Soup image

Steps:

  • Heat oil in a deep pot over medium high heat. Add potatoes and onions, cover and cook 5 minutes, stirring occasionally.
  • Add garlic, bay leaves, and kale to the pot. Cover pot and wilt greens 2 minutes. Season with salt and pepper. Add beans, tomatoes, chourico, and broth to the pot and bring soup to a full boil. Reduce heat back to medium and cook 5 to 10 minutes longer or until potatoes are tender.
  • Serve soup with hunks of crusty bread and butter.
  • Cook's Note: If you are in Mystic, ask for cherise (phonetic pronunciation), if you want to sample the chourico.

2 tablespoons (2 turns around the pan) extra-virgin olive oil
3 medium white waxy potatoes, like yukon golds, peeled and diced

Steps:

  • Heat 2 tbsp of the oil in a large saucepan. Add the onions, garlic and chorizo, then cook for 5 mins until soft. Throw in the potatoes and cook for a few mins more. Pour in the stock, season and bring to the boil. Cook everything for 10 mins until the potatoes are on the brink of collapse.
  • Use a masher to squash the potatoes into the soup, then bring back to the boil. Add the kale and cook for 5 mins until tender. Ladle the soup into bowls, then serve drizzled with the remaining olive oil.

Steps:

  • 1. Dice sweet potato (about 1/2 inch cubes). In a large skillet, heat oil and fry potato cubes until lightly brown.
  • 2. Add kale, tomatoes, sliced chorizo, kidney beans, salt and pepper to taste and smoked paprika.
  • 3. Cook on medium heat for about 30 minutes (may be less, until kale and potatoes are soft).

1 lb kale, frozen, chopped
1 medium sweet potato (about 10 ounces)
1 can(s) kidney beans (15 ounces)
1 can(s) tomatoes, canned and chopped, with liquid (15 ounces)
8 oz chorizo, medium
1 tsp smoked paprika
salt, to taste
pepper, to taste

Steps:

  • Heat a large pot over medium heat. Add the chorizo and cook until browned, about 5 minutes. Add the garlic and onion and cook until soft, about 5 minutes. Stir in the kale, potatoes, tomatoes and water and bring to a boil. Reduce heat, cover and simmer for 20 minutes, stirring twice. Uncover, raise the heat slightly and cook for 20 minutes longer. Stir in the salt and pepper.
  • Place the cod over the liquid, cover and simmer until just cooked through, about 5 minutes. Using a wide spatula, carefully transfer the fillets to shallow soup bowls. Spoon the stew over the cod and serve immediately.

  • Put a large pan of water on to boil. Peel and finely dice the onion and carrot. Wash and finely dice the celery. Peel and finely chop, crush, or grate the garlic clove. Chop each chorizo sausage into 4 pieces. Heat 1 tablespoon of oil in a medium saucepan.
  • Add the chorizo and fry for 5 minutes, stirring frequently. The chorizo will break up a little and release its paprika juices. Add a splash of water to the pan if it looks like catching and burning on the bottom. Remove the chorizo to a plate and turn the heat to low.
  • Add the onion, carrot and celery to the pan and fry for 10 minutes, stirring now and then. Again, add a splash of water to the pan if it looks like catching. Meanwhile, wash the kale. Strip the leaves from their stalks, discard the stalks.
  • Once the large pan of water has come to the boil, add the kale leaves and boil for 3-4 minutes, until wilted. Drain into a colander and run under cold water to cool, then squeeze out any excess liquid. Chop up the leaves. After 10 minutes, add the garlic and tomato purée to the onion mixture.
