CRISPY PAN-FRIED PORK CHOPS
Coat pork chops with breadcrumbs and herbs and then crisp them to perfection in a skillet.

Steps:
- Put the flour in a shallow dish. Break the eggs into another shallow bowl and whisk with 1 teaspoon salt and a few grinds of pepper. Mix the breadcrumbs with the oregano and thyme in a third shallow bowl.
- Dredge a pork chop in the flour, shaking off the excess, dip it into the eggs and then coat evenly with the breadcrumbs. Set aside on a piece of wax paper or baking sheet. Repeat with the remaining pork chops.
- Heat a large skillet over medium heat with enough oil to come halfway up the sides of the chops (about 1/4 cup). When the oil shimmers, add the chops and fry until golden brown and crispy, 3 to 4 minutes on each side. Drain on paper towels briefly. Serve hot with cooked spinach and lemon wedges.

Steps:
- Fry the bacon until crisp, crumble it, and put aside.
- Do not discard the drippings.
- Season the flour with 1/4 tsp Natures Seasons to dredge chops.
- Beat the egg and milk well in a dish that is large enough to dip chops.
- Place the seasoned bread crumbs in another container to coat chops.
- Dip the chops into the flour mix, coating well. Next coat with the egg mixture, and last dip into the bread crumbs to entirely cover the chops.
- Lightly brown the chops on both sides in the bacon drippings left in the frying pan. Add the milk and bacon to the pan and cover and simmer until done, approximately 30 minutes.

- Preheat the oven to 375 degrees F (190 degrees C). Lightly coat a wire rack with cooking spray and set in a rimmed baking sheet.
- Whisk eggs and water together in a shallow dish. Place bread crumbs in a second shallow dish.
- Season pork chops evenly with salt and pepper. Dip and coat chops in egg, allow excess to drip off, then dip in bread crumbs until well coated.
- Heat 1/2 of the oil in a large skillet over medium-high heat. Place 2 chops in the skillet and cook until golden and crisp, about 2 minutes. Flip and cook until crisp on the other side, 1 to 2 minutes more. Transfer to the prepared rack. Heat remaining oil in the skillet and repeat to sear remaining chops.
- Bake pork chops in preheated oven until no longer pink in the center, 10 to 15 minutes. An instant-read thermometer inserted into the center should read 155 degrees F (68 degrees C).

Steps:
- 1. preheat oven to 350
- 2. season pork chops with salt and pepper (or any other seasoning you like)
- 3. wrap strips of uncooked bacon around the pork chops (make sure the bacon is snug around the pork chop)secure with a tooth pick or two
- 4. heat a small amount of oil on med-high and brown the pork chops on each side (5-8) minutes per side or until you like the color
- 5. place pork chops in a baking dish and bake at 350 for about 30 minutes
JOHN'S BAKED PORK CHOPS STUFFED WITH SMOKED GOUDA AND BACON
It was too rainy to grill so I prepared a baked version using boneless center-cut pork chops. I breaded the chops and added a baked apple garnish for flair. We were very pleased by the outcome. I used the fat line as marker for making the cuts for the stuffing. We like our pork well done so cooking time may vary according to your tastes.

- Preheat oven to 350 degrees F (175 degrees C).
- Combine Gouda cheese, bacon, parsley, and 1/8 teaspoon black pepper together in a bowl.
- Cut each pork chop from one side through the middle horizontally to within 1/2 inch of the other side. Open the two sides and spread them out like an open book. Stuff cheese mixture into each pocket and close; secure with a wooden toothpick. Coat each stuffed pork chop with olive oil.

- Set up a dredging station by whisking the egg and milk together in a wide, shallow bowl. Combine the flour, bread crumbs and Parmesan together in another bowl; set aside.
- Season the pork chops with salt, pepper and a dash of garlic power on each side.
