CHEDDAR CHIVE BREAD
"THIS BREAD is the perfect accompaniment to a piping-hot bowl of chili. In addition to a garnish of cheddar cheese on the chili, which Mom often added, we had her wonderful bread, chock-full of cheese flavor. Sometimes I'll make the dough into rolls or soft breadsticks."

- In a large bowl, dissolve yeast in warm water. Add the cheese, chives, butter, sugar, salt, thyme and 3 cups flour. Beat on medium for 3 minutes. Stir in enough remaining flour to form a soft dough. , Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1 hour. , Punch dough down. Shape into two loaves and place in greased 9x5-in. loaf pans. Cover and let rise in a warm place until doubled, about 30 minutes. , Bake at 350° for 40-45 minutes or until golden brown. Remove from pans to cool on a wire rack.

BACON-CHEDDAR-CHIVE PARTY BREAD
This comes from the King Arthur Site and such a fun party bread and so easily adaptable to your favorite fillings. Another KAF hit, They Note: We like to bake this celebration bread in a party bundt pan, which makes it super easy to cut each serving; but any tube-style pan will work. Just be sure to cut at 1" intervals to maximize the bread-to-filling ratio.

Steps:
- Weigh out your flour; you'll find its weight by toggling to "ounces" at the top of the ingredient section above. Or measure it by gently spooning it into a cup, then sweeping off any excess. Combine the flour with the remaining ingredients and mix to form a shaggy dough.
- Knead the dough - by hand, mixer, or bread machine set to the dough cycle - until it forms a smooth, somewhat tacky ball, adding more flour or water if necessary.
- Place the dough in a lightly greased bowl, cover, and let it rise for 60 to 90 minutes, until it's puffy though not necessarily doubled in bulk.
- Lightly grease a 10-cup party bundt pan or other tube-style pan.
- Gently deflate the dough and form it into a large ball. Use your fingers to pierce a hole through the center of the ball and place the resulting dough ring into the prepared pan.
- Cover the pan with greased plastic and let the dough rise for 60 to 90 minutes, until it's puffy and starting to fill the pan. Towards the end of the rising time, preheat the oven to 350°F.
- Uncover the pan, and bake the bread for 25 to 30 minutes, until it's golden brown on top; a digital thermometer inserted into the center will read 190°F.
- Remove the bread from the oven, allow it to cool for 10 minutes in the pan, then turn out onto a rack to cool completely.
- While you're waiting for the bread to cool, cook and chop the bacon (we recommend baking it), and chop the chives.
- In a medium bowl combine the bacon with the cheese.
- Once the loaf has cooled, slice it down to within 1" of the base (you'll want the bottom to remain unsliced in order to maintain the ring), using the scalloped pattern as a guide if the loaf was baked in a party bundt pan, or cutting at 1" intervals if it was baked in another tube-style pan.
- Gently pull each section of the bundt away from its neighbor and fill the cavity with a heaping tablespoon of the bacon-cheddar mixture.
- Once all the cavities have been filled, sprinkle the chopped chives over the entire loaf.
- Tent the filled bread with foil, and return it to a 350°F oven. Bake the filled bread for 25 to 30 minutes, removing the foil for the final 5 to 10 minutes of baking, until the cheese has fully melted into the cavities.
- Remove the filled bread from the oven and allow to cool slightly before serving.
- Store any leftover bread in the refrigerator for a day or so; freeze for longer stor.

- Position rack just above center of oven and preheat to 425°F. Line heavy large baking sheet with parchment paper. Cook bacon in heavy large skillet over medium heat until crisp and brown. Transfer bacon to paper towels to drain, then chop coarsely.
- Combine flour, baking powder, baking soda, and salt in processor; blend 5 seconds. Add butter cubes. Blend until coarse meal forms, about 30 seconds. Transfer flour mixture to large bowl. Add cheddar cheese, fresh chives, and chopped bacon; toss to blend. Gradually add buttermilk, stirring to moisten evenly (batter will feel sticky).
- Using lightly floured hands, drop generous 1/2 cup batter for each biscuit onto prepared baking sheet, spacing batter mounds about 2 inches apart.
- Bake biscuits until golden and tester inserted into center comes out clean, 18 to 20 minutes. Brush biscuits lightly with melted butter. Let cool 10 minutes. Serve biscuits warm or at room temperature with honey, if desired.

- Preheat the oven to 425°F Lightly grease a baking sheet, or line it with parchment.
- Whisk together the flour, salt, baking powder, and sugar.
- Work the butter into the flour until the mixture is unevenly crumbly.
- Mix in the cheese, chives, and bacon till evenly distributed.
- Add ¾ cup of the cream, stirring to combine. Try squeezing the dough together; if it's crumbly and won't hang together, or if there are crumbs remaining in the bottom of the bowl, add cream until the dough comes together. Transfer the shaggy dough to a well-floured work surface.
- Pat the dough into a smooth 7" disk about ¾" thick. Transfer the disk to the prepared baking sheet.
- Use a knife or bench knife to cut the disk into 8 wedges, spreading the wedges apart a bit on the pan.
- Brush the scones with a bit of cream; this will help their crust brown.
- Bake the scones for 20 to 25 minutes, until they're golden brown. Remove them from the oven, and cool right on the pan. Serve warm, or at room temperature.
- Yield: 8 large scones.

- Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside.
- Preheat oven to 400 degrees F (200 degrees C). Lightly grease muffin pan.
- In a large mixing bowl, combine flour, sugar, baking powder, salt, garlic powder, chives, parmesan cheese, cheddar cheese and crumbled bacon. Combine the egg, milk, cream of mushroom soup and vegetable oil. Mix into the dry ingredients and stir together just to moisten.
