Bacon lovers unite! This recipe is a bacon lover's dream, with bacon 2 ways! Due to the BBQ sauce being sweet, I recommend using a spicy cheese (like habanero Jack).

BBQ Meatball Sliders with Bacon image

Steps:

  • Attach the meat grinder attachment to an electric stand mixer (such as KitchenAid®). Run enough bacon through the meat grinder to make 8 ounces ground bacon.
  • Combine ground bacon, beef, bread crumbs, 1/4 cup barbeque sauce, and steak sauce in a bowl. Mix until well combined and shape into 2-inch round balls. Set meatballs on a baking sheet.
  • Preheat the oven to 350 degrees F (175 degrees C).
  • Bake meatballs until an instant-read thermometer inserted into the center reads 160 degrees F (71 degrees C), about 25 minutes.
  • Place a slice of cheese on top each meatball. Toast slider buns if desired. Place a meatball between each slider bun. Top with cooked bacon slices, onion, remaining barbeque sauce, and roasted red bell peppers.

  • Thaw dough according to package directions. Cut each roll in half; reshape portions into balls. Place 2 in. apart on lightly greased baking sheets. Cover with clean kitchen towels; let rise in a warm place until almost doubled, about 30 minutes. , Uncover dough; gently press to flatten slightly. Whisk egg and water; brush over tops. Sprinkle with sesame seeds. Bake at 400° for 8-10 minutes or until golden brown. Remove to wire racks., In a large bowl, combine the first five kabob ingredients. Crumble beef over mixture and mix well. Shape into 24 patties. On 24 metal or soaked wooden skewers, alternately thread patties, red pepper and onion, inserting patties sideways., Moisten a paper towel with cooking oil; using long-handled tongs, lightly coat the grill rack. Steps:

  • Preheat the oven to 350˚ F. Lightly coat an 8-inch square baking dish with cooking spray. Whisk the eggs, half-and-half and 1/2 teaspoon salt in a medium bowl. Pour into the pan and bake until puffed and set, 16 to 18 minutes. Let cool slightly.
  • Meanwhile, heat a large skillet over medium heat and coat with cooking spray. Add the Canadian bacon and cook, flipping, until browned, about 1 minute per side. Remove to a cutting board and cut each slice into 4 pieces.
  • Spread the butter on the cut sides of the rolls. Slice the baked eggs into 12 small pieces and lift out of the pan with a spatula; place one on each roll bottom. Top each with a piece of cheese, 2 pieces Canadian bacon and the roll tops. Thread strawberries and grapes onto skewers and serve with the sliders.

  • Preheat oven to 350°. Without separating rolls, cut each package of rolls horizontally in half; arrange bottom halves in 2 greased 13x9-in. baking pans. Sprinkle each pan of rolls with 1 cup cheese. Bake until cheese is melted, 3-5 minutes., In a large skillet, cook beef and onion over medium heat until beef is no longer pink and onion is tender, breaking beef into crumbles, 6-8 minutes; drain.
