BACON-STUFFED CHERRY TOMATO APPETIZERS

These creamy, cheesy, bacon-filled appetizers do require you to cut the tops off of 30 cherry tomatoes. But the results are absolutely worth the effort.

Bacon-Stuffed Cherry Tomato Appetizers image

Steps:

  • Cut tops off tomatoes; discard tops. Scoop out seeds from tomatoes; place tomatoes, cut sides down, on paper towels to drain.
  • Meanwhile, combine bacon, dressing, cheese and onions. Refrigerate 30 min.
  • Spoon bacon mixture into tomatoes.

Bacon Cheddar-Stuffed Cherry Tomatoes image

Steps:

  • Gently squeeze tomato halves to remove juice and seeds. Pipe cheese spread on top of each tomato half. Sprinkle each with chives. Arrange on serving platter.

BACON AND LETTUCE STUFFED CHERRY TOMATOES

This is an easy, simple recipe that goes over well. You can make the filling ahead and scoop out the tomatoes well ahead of time but do not fill the tomatoes until just before serving. I like to add the lettuce to the filling just before filling the tomato however the original recipe said you can mix it in when you combine all the stuffing ingredients. Looks great on a buffet table

Bacon and Lettuce Stuffed Cherry Tomatoes image

Steps:

  • Cut the top off the tomatoes, scoop out the seeds& pulp. Use the seeds & puld in some other recipe.
  • Salt the inside of the tomato and put them upside down on a paper towel to drain for about15 minutes.
  • Meanwhile combine the bacon, chives, lettuce and Mayo, season with salt and pepper (remember that you have already salted the inside of the tomatoes).
  • Fill the tomatoes just before serving.

  • Combine all the ingredients except the tomatoes.
  • Cut a thin slice off the top of each tomato. With a small spoon, hollow out the tomatoes and fill each tomato with bacon filling.

Steps:

  • Place bacon in a large, deep skillet. Cook over medium high heat for 6 to 8 minutes, or until evenly brown. Once cooled, crumble and set aside.
  • In a bowl, stir together the mayonnaise, bacon, green onions, and parsley until well blended. Set aside.
  • Cut a small slice from the top of each tomato. Using a melon baller or small spoon, scoop out the inside of each tomato and discard. Fill each tomato with the bacon mixture, and refrigerate for 1 hour. Serve chilled.

  • In order to get these tomatoes to stand up, you will need to cut off the opposite of the stem end.
  • Use a small measuring spoon or melon baller to gently remove the pulp and seeds from each tomato. Turn the tomatoes cut side down onto a paper towel allow to drain while you prep the rest of the ingredients.
  • Cook the bacon. I always place my bacon on cookie sheets and cook in the oven at 350º. I flip it 2 or 3 times while it’s cooking. It needs to me crispy. As in life in general, chewy bacon isn’t good in this recipe. Place the bacon on a paper towel lined plate. While the bacon is cooling, finely slice the green onions. Once the bacon is cooled chop it up into small pieces.
  • Place the chopped bacon and onions in a bowl with the mayonnaise and mix until well combined.
