Steps:

  • Soak the bamboo skewers in water, to keep from burning during grilling.
  • Partially cook the bacon; cut in half, and let cool on paper towels. Wrap the bacon around the shrimp, and skewer with bamboo through the point where the bacon ends meet (to keep from unraveling). Skewer 3 to 5 shrimp per bamboo.
  • Combine the BBQ sauce, oil, chipotle, lemon juice, mustard, chile flakes, black pepper and cayenne in a blender and puree. Separate the sauce in half, one for basting and one for dipping.
  • Cook the bacon-wrapped shrimp on a grill over medium heat. When the shrimp begin to turn pink, begin basting with the chipotle sauce.
  • Serve with the remaining sauce on the side for dipping.

8 ounces bacon
20 shrimp (21/25 count), shelled, deveined
1/2 cup BBQ sauce
1/4 cup canola oil
3 tablespoons chipotle pepper in adobo
3 tablespoons lemon juice
1 tablespoon Dijon mustard
1/2 teaspoon red chile flakes
1/4 teaspoon ground black pepper
1/4 teaspoon cayenne pepper

Steps:

  • Soak 5 to 8 bamboo skewers in water for about 20 minutes to keep them from burning on the grill or under the broiler.
  • Meanwhile, cook the bacon in a large skillet until halfway done, about 4 minutes. Drain and cool on paper towels. Wrap a piece of bacon around the middle of each shrimp; skewer with bamboo through the point where the bacon ends meet to keep it from unraveling. Thread 3 to 5 shrimp on each bamboo skewer.
  • Puree the barbecue sauce, oil, lemon juice, mustard, chipotles, red pepper flakes, cayenne pepper and 1/4 teaspoon freshly ground pepper in a blender. Set aside half of the sauce for dipping.
  • Preheat a grill, grill pan or broiler. Grill or broil shrimp (on a foil-lined baking sheet, if broiling) for 5 minutes, basting with the sauce once they begin to turn pink. Flip, baste again and grill or broil until just cooked through, about 4 more minutes. Serve with extra sauce.

20 strips bacon (about 12 ounces)
20 medium-large shrimp, shelled and deveined (about 1 pound)
1/2 cup barbecue sauce
1/4 cup canola oil
3 tablespoons lemon juice
1 teaspoon dijon mustard
3 tablespoons chopped chipotles in adobo sauce
1/2 teaspoon red pepper flakes
1/4 teaspoon cayenne pepper
Freshly ground pepper

Steps:

  • Wrap shrimp with 1/2 slice of bacon, securing with a toothpick. Be sure and use the large shrimp--the cooking time for the shrimp and the bacon is similar. If you use medium-sized shrimp, you might want to precook the bacon a little--over cooked shrimp are tough and rubbery--and a real shame.
  • Preheat the oven to 450 degrees F (230 degrees C).
  • Line a jelly roll pan with extra heavy duty foil, and place baking rack in the pan. Place the shrimp on the rack, and sprinkle heavily with the barbecue seasoning. Turn and sprinkle second side. Set aside for 15 minutes. The bacon will turn from creamy white to a little opaque, and the seasonings will soak in.
  • Bake in the preheated oven until bacon is crisp and shrimp are tender, 10 to 15 minutes. The rack keeps the shrimp from sitting in the draining bacon fat. With a little luck, you won't tear the foil--you can throw that away and only have to scrub the rack.

  • Combine all of the marinade ingredients in a small bowl and whisk together. Place the shrimp in an airtight container or a large ziploc bag. Pour the marinade over the shrimp and seal the bag or container. Turn over a few times to ensure that everything is well coated. Allow the shrimp to marinate for 30 minutes.
  • When almost ready to grill, soak wooden skewers in water for 15 minutes before wrapping each shrimp in a piece of bacon and threading the shrimp onto the skewers. Heat the grill to medium high and generously oil the grates to prevent the meat from sticking. Place the kabobs on the grill and let cook, turning once or twice, until the shrimp turns pink and the bacon is cooked through. Serve the shrimp kebabs with Avocado Cream Sauce. Enjoy!
