- Preheat the oven to 400 degrees. Peel the bananas and slice in half lengthwise. Lay the pieces into a buttered 9-by-13-by-2-inch ovenproof dish. Pour the lime juice and rum evenly over the bananas. Sprinkle on the cinnamon, nutmeg, and brown sugar. Dot on the butter, if using, and bake for 10 to 15 minutes. Serve hot, topped with a tablespoon of fresh cream or ice cream.

- Preheat oven to 375.
- Cut the bananas in halves. Butter a baking dish thoroughly, and place the bananas flat in them. Sprinkle the sugar mixed with the cinnamon over the bananas, and don't move them.
- Pour the milk over the banans until they are all covered , cut butter into little cubes and scattered all over the bananas, cover with foil.
- Place baking dish on a edged baking sheet in case millk cooks over, bake with foil on for the first five minutes, then uncover and let the cook until brown on top.
- This dessert can be served hot or cool with vanilla cream on the side, or on it's own.

- Place the whole bananas or plantains on a baking sheet and bake, turning them every 10 minutes, until the peel starts to split and the inside is tender when tested with a skewer, about 40 minutes. Remove from the oven but keep on the baking sheet. Carefully slice the peel lengthwise to just reveal the flesh and drizzle with some crema and sprinkle with cheese. - Heat the oven to 220C/200C fan/gas 8. Toss the banana halves in an ovenproof dish with the sugar, maple syrup and rum or whisky. Sprinkle with a small pinch of salt, if you like.

- Brush bananas with about 1/4 cup of butter mixture.
- Place bananas on center of cooking grate.

- Cut off the ends of the bananas and place the unpeeled bananas on an ungreased cookie sheet. Bake for about 15 minutes, or until their skins burst and turn black. Discard the skins (once cooled a bit) and cut the bananas lengthwise.
