BOSTON BAKED BEAN SANDWICHES
Little known outside of Massachusetts, this recipe is a by-product of that state's long tradition of Saturday night baked bean suppers. During the days afterward, leftover beans are spread on buttered brown bread, and covered with cold cuts, and sliced cheese to make a delicious snack. Recipe is an adaptation of a sandwich served by friends over a weekend visit.

LINDA'S BEAN AND MAYONNAISE SANDWICH (SANDWICHES)
One day my friend at work brought this in for lunch. I turned my nose up at it, and laughed as she told me how delicious it was... The next day she made me one, and made me try it... I was hooked on the first bite...Try it...I bet you will get hooked too! I would not use black beans on this recipe. I use Friends or Bush's baked beans. BAKED BEANS, CHEDDAR AND PICKLE SANDWICH
My own invention -- an unusual combination! But, the sweetness of the beans, the sharpness of the cheddar and the pungency of the pickles work Really well together.

Steps:
- Toast the bread, as desired.
- Smash the beans down onto one slice, top with the pickle and cheese, cover and enjoy!
- NOTES:.
- MUST use a seriously sharp cheese!
- I use Heinz Vegetarian Baked Beans, but the flavor of any sort of sweet baked beans should work with the sharp cheddar and pickles.
- I eat this with cold or warm beans, but always solid cheese.

- Beans: In a medium sized pan over medium heat add your bacon. Fry until crispy with the fat full rendered, then pour in the beans. Gently simmer for 5 or so mins until the juice reduces down and the beans are fairly thick. Remove from pan to cool slightly.
- Sandwich: Spread one side of each of the slices of bread with butter, then flip 3 of them so they're butter-side-down and sprinkle with cheddar. Top with beans, add a few dashes of Worcestershire sauce (optional), then top with more cheddar. Add another slice of bread butter-side-up.
- Fry: Add to a pan over medium heat (you'll probably need to do this in batches). Fry both sides until golden with the cheese just starting to ooze out. Repeat then serve up and enjoy!

- Secure top of the pie iron over the sandwich. If bread crust sticks out beyond the iron, use a sharp knife to cut away excess.
- Heat pie iron over campfire embers or on camp stove or grill, turning often to toast bread evenly and melt cheese, 4-6 minutes depending on heat source.
- Remove pie iron from heat and carefully open using heat proof gloves. Use knife to release edges if needed, and turn toastie out onto a cutting board or plate.
