BAKED RICE

Steps:
- Preheat oven to 400 degrees.
- Melt half of butter in heavy saucepan and cook the onion and garlic, stirring, until onion is translucent. Add rice and stir briefly over low heat until grains are coated with butter.
- Stir in broth, making sure there are no lumps in rice. Add parsley, thyme and bay leaf. Cover with a close-fitting lid and place in oven.
- Bake exactly 17 minutes. Remove cover and discard the parsley, thyme sprigs and bay leaf. Using a two-pronged fork, stir in remaining butter and serve.

I have made this SO many times with Creamy Chicken Bake, for family and friends, that they expect it at least once a year. My friend, Diane, first served us this 30 years ago, when we were neighbors.

Steps:
- Combine soup and butter, stir well.
- Drain mushrooms and water chestnuts, reserving liquid.
- Add enough water to liquid to make 1 1/2 cup.
- Add mushrooms, waterchestnuts, liquid and rice to soup mixture.
- Pour into 9X12 greased baking dish.
- Cover and bake at 350 degrees for 1 hour.

- Preheat oven to 425 degrees F (220 degrees C).
- In a 9x9 inch baking dish combine rice, soup and broth. Place butter slices on top of the mixture.
- Cover with foil and bake for 30 minutes. Remove cover and bake 30 minutes more.

BAKED "FRIED" RICE
If you don't have cold leftover rice around, this easy oven method will produce something very similar to the classic fried rice, with the perfect texture every time. Just like rice pilaf, the grains of rice get coated in fat before absorbing the cooking liquid, ensuring plump, tender, separate grains with no sticky clumps. Just adjust cooking time if using a different kind of rice or pan size. Garnish with green onions and serve with a runny poached egg on top if desired.

- Preheat the oven to 400 degrees F (200 degrees C).
- Place rice in a large baking dish. Drizzle in canola and sesame oils; toss to coat rice completely. Add garlic, green onions, bell peppers, carrots, peas, and ham. Season with salt. Stir until well combined.
- Combine chicken broth, soy sauce, and chile paste in a pot over high heat. Stir and bring to a boil. Pour on top of the rice and stir briefly. Cover top tightly with heavy-duty aluminum foil.
- Bake in the preheated oven for 32 minutes. Remove and let stand for 10 minutes. Uncover; fluff rice with a fork. Taste and adjust seasoning.
- Increase oven temperature to 475 degrees F (245 degrees C). Return to the oven until rice is browned and crusted, about 10 minutes.

- Mix French onion soup and consomme; pour over rice.
- Cut butter in pats and place in dish.
- Bake 1 hour at 350 degrees.
- Check it at 40 minutes.
- I added cheese on the top when I made this dish. Yummy!
