MAKE-AHEAD CHICKEN TETRAZZINI

- Bring a large pot of salted water to a boil. Add the ziti and cook until al dente (if a range is given on the box, choose the shortest time, otherwise, cook it 1 minute less than the suggested time). Drain the pasta and return it to the pot.
- Meanwhile, melt the butter with the canola oil in a large high-sided skillet over medium-high heat. Sprinkle the chicken with salt and pepper, then add to the hot skillet and cook, turning once, until golden brown and just cooked through, about 7 minutes per side. Transfer to a plate.
- Reduce the heat to medium and add the cauliflower, onion and mushrooms to the skillet along with 1/2 teaspoon salt and a few grinds of pepper. Cook, stirring occasionally, until the onions have softened and the mushrooms are tender, about 6 minutes. Add the garlic and cook for 1 minute. Sprinkle the flour over top and cook, stirring, until all of the flour has moistened, about 1 minute. Add the wine and simmer, stirring, until reduced by about half. Add the chicken broth and 1/4 cup water, increase the heat to medium high and cook, stirring constantly, until simmering and slightly thickened. Add the heavy cream, cream cheese and 1/2 cup Parmesan; stir to combine. Pour all of the sauce and vegetables into the pot with the pasta. Add the peas, thyme and green chiles. Chop the chicken into bite-sized pieces and add to the pot. Season with salt and pepper.
- Transfer the mixture to a 9-by-13-inch baking dish and sprinkle the top with the remaining 1/4 cup Parmesan. If not serving right away, let cool. Cover and refrigerate up to overnight.
- When ready to bake, preheat the oven to 425 degrees F. Bake until hot and bubbling, about 45 minutes.
MAKE AHEAD SWISS CHICKEN
This is an easy and delicious recipe that you can make ahead and freeze. I usually serve with rice and green beans.

Steps:
- Grease a 9X13 disposable foil pan with non-stick cooking spray.
- Place chicken pieces in dish.
- Sprinkle with swiss cheese.
- Mix together remaining ingredients and spread over cheese.
- Cover dish with foil.
- Place croutons in a ziploc bag and crush with a rolling pin.
- Tape bag of crushed croutons to dish.
- Freeze.
- When ready to bake, thaw in refrigerator overnight.
- Uncover dish and sprinkle with croutons.
- Bake at 350 degrees for 50 minutes or until bubbly. Cover with foil mid-way through cooking if croutons start getting too brown.

- Line 9-inch square baking dish with foil, with ends of foil extending over sides; spray with cooking spray. Place chicken in prepared dish. Fold ham slices in half; place over chicken. Top with cheese and broccoli.
- Whisk gravy, sour cream and mustard until blended; pour over broccoli. Cover with foil; freeze until firm. Use foil handles to remove casserole from dish; place (with foil) in freezer-weight resealable plastic bag. Seal bag. Freeze up to 2 months.
- Remove casserole from freezer 24 hours before serving; place casserole (with foil) in 9-inch square pan. Refrigerate until ready to bake.
- Heat oven to 400°F. Bake casserole 20 min. Uncover casserole; sprinkle with cracker crumbs. Bake 15 to 20 min. until chicken is done (165°F). Meanwhile, prepare rice as directed on package, omitting salt.
- Serve chicken casserole with the rice.

SWISS CHICKEN
This is a wonderful recipe. This was given to our family years ago by a good friend through the Boy Scouts. My brother would eat it all if he was allowed to and now my children who are both little love this dish. For people on a low budget this is an easy meal to make and it is easy to reheat. My mother, who does not eat chicken, loves the topping of this dish.

- Preheat oven to 350 degrees F(175 degrees C).
- In a 9x13 inch baking dish, layer the chicken breasts, soup and water. Top each breast with a slice of Swiss cheese, then top it all with the breadcrumbs. Cut the butter or margarine into pads and place them over the top of the casserole.

- In a large bowl, combine soup and milk until blended. Add the stuffing mix with contents of seasoning packet, chicken, broccoli, celery and 1 cup cheese. - For the sauce, in a medium saucepan, bring the broth and all the seasonings to a simmer. In a liquid measuring cup or small bowl, vigorously whisk the milk and flour together until smooth.
