ONION CHICKEN IN BALSAMIC SAUCE

I invented this one night when these were the only ingredients I had on hand. It's the first time my husband ever raved--and I mean RAVED--about my cooking. He was still talking about it days later! Serve over noodles if desired.

Onion Chicken in Balsamic Sauce image

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large skillet, heat oil over medium heat. Add onion and reduce heat to low. Allow onion to caramelize, stirring only enough to prevent sticking and to be sure that all sides are fully cooked. Add garlic and saute briefly.
  • Increase heat to medium. Add chicken hindquarters to skillet and brown on both sides. Remove chicken, onion and garlic and place in a 9x13 inch baking dish.
  • Combine the stock and vinegar. Deglaze the skillet with this mixture, then bring to a boil and continue to simmer, stirring occasionally, until the mixture has thickened. Pour mixture over chicken and stir in the sun dried tomatoes. Cover dish tightly and bake in the preheated oven for 15 to 20 minutes, or until chicken is done and juices run clear.

Orange, Onion, and Balsamic Sauce image

Steps:

  • Halve onion through root end and cut crosswise into very thin slices. In a 1 1/2-quart heavy saucepan simmer onion with orange juice and vinegar, stirring occasionally, until liquid is reduced and thickened, 30 to 40 minutes. Stir in sugar and salt to taste and cook mixture over low heat, stirring, until sugar is dissolved. Serve sauce warm or at room temperature.

1 medium red onion
1 cup orange juice
1/2 cup balsamic vinegar
1 to 2 tablespoons sugar

Filet Mignon on Charred Onions and Zucchini with Balsamic Vinegar Sauce image

Steps:

  • For sauce:
  • In a saucepan, cook wine, vinegar, and shallot over medium-high heat until reduced to 1/3 cup. Remove from heat; discard shallot. Whisk in butter, one piece at a time. Season with salt and freshly ground pepper to taste. Keep warm until ready to serve.
  • For meat and vegetables:
  • Place a heavy cast-iron skillet over high heat until very hot. Add 2 tsp oil. Place onion in skillet and cook until lightly charred on each side but not blackened.Transfer to paper towels. Season zucchini with salt and pepper. Return skillet to high heat. When very hot, add 1 tsp oil and sear zucchini until brown on each side. Transfer to paper towels. Brush meat with remaining 2 tsp oil and season with salt and pepper to taste. Return skillet to high heat. When skillet is very hot, sear meat 2 minutes on each side (for rare) or to taste. Arrange 3 zucchini ovals on each of 4 warm plates. Place 3 or 4 onion rings over zucchini. Put a filet on top of onion. Spoon 2 tbsp sauce around each filet, top with a few more onion rings and serve.

1 cup plus 2 tbsp red wine (Cabernet Sauvignon or Pinot Noir)
1 cup balsamic vinegar
1 shallot, peeled and halved
1 tbsp butter, cut into 2 pieces
Meat and vegetables
4 tsp extra-virgin olive oil
1 large white onion, peeled and sliced 1/4 inch thick
2 medium zucchini, trimmed and sliced 3/4 inch thick
4 trimmed filets mignons (4 oz each) or top-round steaks (use organic meat, if possible)

BALSAMIC CREAM SAUCE

The vinegar and cream go very well together. Best when sauteed chicken and asparagus is added to the mix. I use this sauce on pasta all the time.

Balsamic Cream Sauce image

Steps:

  • Heat olive oil and butter in a saucepan over medium-low heat. Stir in the onion, and cook until it has caramelized to a dark, golden brown, about 15 minutes. Stir in the balsamic vinegar, and cook for 1 minute before stirring in the chicken bouillon and cream. Bring to a simmer, then remove from the heat and stir in the Parmesan cheese until melted.

Bacon Wrapped Steak With Balsamic Onion Sauce image

Steps:

  • Sauce.
  • In a large frying pan heat oil over high heat.
  • Add onions and lower the heat to medium.
  • Add salt& pepper mix thoroughly.
  • Sweat onions down for about 15 minutes stirring often.
  • You want the onions very soft.
  • Add sugar and reduce heat to low.
  • Mix well& cook 5-10 minutes or until most of liquid is absorbed.
  • Add balsamic vinegar.
  • Mix well cook for 20-40 minutes until sauce becomes a dark rich syrup.
  • Steak.
  • Pre-heat ove to 450 degrees.
  • Heat oil in a oven proof skillet.
  • Wrap a piece of bacon around each filet, secure with toothpick if needed.
  • sprinkle steaks with crushed peppercorns.
  • Sear each side of filets about 2 minutes.
  • Place skillet in oven and bake 10 minutes.
  • Steakes will be medium rare.
  • Remove filets from skillet.
  • Allow to rest 1-2 minutes Pour warm sauce over top& serve.

  • COOK THE CHICKEN: season both sides of the chicken breast with salt, pepper, and garlic powder. Heat the oil in a large skillet over medium-high heat and cook the chicken all the way through, roughly 6-12 minutes depending on the size. Make sure chicken reaches 165ºF on a thermometer; remove the chicken to a plate.
  • CARAMELIZE THE ONIONS: add the butter to the skillet along with the onions. Push the onions around the pan so they pick up all the flavor bits left behind by the chicken, lower the heat to medium-low and allow the onions to cook for 12-15 minutes, stirring them as needed to prevent from sticking. The onions are done when they soften completely and deepen in color. Add the thyme, red pepper flakes, sugar, and balsamic vinegar, let the vinegar cook out for a couple of minutes.
  • MAKE THE SAUCE: Grab a whisk for this next step. Slowly pour in the chicken broth in a steady stream while you whisk, this will help deglaze the pan. Kick the heat up to high and let the sauce reduce for 2-3 minutes or until it thickens a bit. Once the sauce reduces, lower the heat again, and add in the cream. You don't want the cream to start boiling immediately as it will cause the sauce to split. Let the sauce come to a gentle simmer, once it does, add in the chicken breasts and spoon the sauce on top. Serve immediately. The sauce will thicken as it sits so you may need additional broth to thin it out.
