Steps:
- Put the flour in a shallow dish. Break the eggs into another shallow bowl and whisk with 1 teaspoon salt and a few grinds of pepper. Mix the breadcrumbs with the oregano and thyme in a third shallow bowl.
- Dredge a pork chop in the flour, shaking off the excess, dip it into the eggs and then coat evenly with the breadcrumbs. Set aside on a piece of wax paper or baking sheet. Repeat with the remaining pork chops.
- Heat a large skillet over medium heat with enough oil to come halfway up the sides of the chops (about 1/4 cup). When the oil shimmers, add the chops and fry until golden brown and crispy, 3 to 4 minutes on each side. Drain on paper towels briefly. Serve hot with cooked spinach and lemon wedges.
BATTER FOR FRIED PORK
I made this one Halloween night many years ago attempting to make Sweet and Sour Pork. My mom kept eating the fried pork before I could make the sauce. "Do you have to put that sauce on?" She asked me. Well she ate it with the sauce but for future we just would do the battering part. A friend of mine uses chicken drummies-they fly out the door.

SWEET AND SOUR PORK
Sweet and sour are two of the five flavors of classical Chinese cooking (along with salty, pungent, and bitter). I like this version of the crispy pork recipe with fresh pineapple.

Steps:
- 1. Prepare the batter: In a medium bowl, stir together the eggs, cornstarch, and flour. The batter should be liquidy enough to coat the pork. If the batter looks too dry, add 1 to 2 tablespoons of water and stir again. Add the pork and stir gently to coat. Let stand at room temperature for 10 minutes.
- 2. Prepare the sauce: In a small bowl, stir together the water, ketchup, pineapple juice, cider vinegar, Worcestershire sauce, soy sauce, and sugar until the sugar is dissolved. Set aside.
- 3. Heat the peanut oil in a wok until it registers 350°F on an instant-read oil thermometer. Working in 2 or 3 batches, add the first batch of pork cubes and fry until golden brown on the outside and cooked through, 4 to 5 minutes. Remove the pork with a slotted spoon and drain on a plate lined with paper towels. Remove any excess bits of batter from the oil with a slotted spoon or fine-mesh strainer. Continue frying the rest of the pork.
- 4. Transfer the oil to a heat-proof container. (It will take about 1 hour to fully cool, after which you can transfer it to a container with a tight lid to dispose of it.) Wipe up any food remains in the wok with paper towels, being careful not to touch the metal directly with your hands.
- 5. Heat the remaining 1 tablespoon oil in the wok or a skillet over medium-high heat. Add the garlic and ginger and stir-fry until just aromatic, about 20 seconds. Add the pineapple and the sauce and stir to coat the vegetables. Let the sauce simmer for 2 to 3 minutes to allow the pineapple to become tender (about 1 minute for canned pineapple). Return pork to the wok and toss until well coated with the sauce. Transfer to a plate and serve.

CRISPY SOUTHERN FRIED PORK CHOPS
Another favorite of my family that dates back to my grandmother, these chops come out so crispy and delicious. I serve them with mashed potatoes, a veggie, and sawmill gravy. A great comfort meal any time! This recipe is very similar to my Crispy Southern Fried Chicken recipe. I found that it works very well with pork chops,...

Steps:
- 1. Remove pork chops from package, wash and pat dry. Place pork chops on a cutting board. Using a meat mallet, pound both sides.
- 2. In one bowl, add egg and milk. Mix with fork until smooth. In another bowl, add flour, chicken flavored base, and seasonings, mix well. Dredge pork chops in flour mixture, then dip in milk and egg mixture. Roll in flour mixture.
- 3. Heat about 1" oil in heavy skillet (I use a cast-iron chicken fryer). When oil is hot, add pork chops, no more than 2 to 3 at a time. Fry about 3 to 5 minutes per side, until golden and juices run clear. Remove to serving platter. Repeat with remaining pork chops. Serve hot with your favorite side dishes.
- 4. Chicken flavored base is a moist powder and it is available in most grocery stores in the soup/bullion aisle.
SOUTHERN PORK TENDERLOIN
I love this recipe because it's very easy and very much an under-20-minute recipe when you are in a hurry! I serve it with garlic mashed potatoes and a side of either mixed veggies or some sweet corn on the cob! I top it with my Mustard Pork Garnish recipe I have on site.

- Heat olive oil over medium-high heat in a skillet and fry the pork until the crumb coating is browned and the pork is no longer pink inside, 2 to 3 minutes per side. An instant-read meat thermometer inserted into the center of the pork should read at least 145 degrees F (65 degrees C).

- Season pork chops liberally on both sides with seasoned salt and pepper. Dredge pork chops in flour, shaking off the excess.
- Add chops to the hot skillet and cook until browned on both sides and a meat thermometer registers 140 degrees F (about 7-10 minutes per side). Smaller bone-in pork chops will cook in 5-6 minutes per side, so just keep an eye on your chops and use the thermometer to know when they’re done. The internal temperature of the pork chops will continue to rise after you remove them from the pan.
