MEATLOAF ON THE GRILL

We don't eat beef so we use ground pork and ground turkey for this, but you could use any ground meat you'd like. This is a fun way to cook a meatloaf that is great for a hot summer day when you don't want to turn on the oven. We use a charcoal grill. I usually don't measure the seasoning, so go by your own tastes.

Meatloaf on the Grill image

Steps:

  • Preheat an outdoor grill for medium heat.
  • In a large bowl, mix together the ground pork, ground turkey, eggs, bread crumbs, mushrooms, garlic, Italian seasoning, basil, and Worcestershire sauce using your hands. Pat evenly into a 9 inch pie plate.
  • Place the pie plate onto a cookie sheet, and place on the grill grate. Close the lid, and cook for 30 to 45 minutes, until no longer pink. The meat will cook faster on the grill than in the oven.

Steps:

  • Preheat oven to 350 degrees.
  • Combine chicken and bread crumbs in large bowl.
  • Set aside.
  • Cut the carrot& onion into chunks and add to blender.
  • Add the remaining 7 ingredients to the blender.
  • Process in blender until carrot is very fine.
  • Pour blender mixture over meat mixture.
  • Mix very well using your hands.
  • Form mixture into a loaf and place in lightly greased 9" X 13" pan.
  • Cover with foil and bake for one hour.
  • Remove foil& continue baking for 15-30 minutes, until loaf is cooked through.

1 lb ground chicken
1/2 cup fine breadcrumbs
1 large egg white
1 medium carrot
1 small onion
1/4 cup ketchup
1/2 teaspoon minced garlic
1 teaspoon Worcestershire sauce
1/4 teaspoon celery seed
1 teaspoon salt

Barbeque Chicken Meatloaf image

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Spray a loaf pan with nonstick cooking spray.
  • Melt butter in a skillet over medium heat. Add onion and garlic and cook until softened, about 4 minutes. Transfer to a large bowl.
  • Add ground chicken, oats, zucchini, barbecue sauce, egg, salt, chili powder, and cayenne to the bowl and mix until well combined. Shape into a loaf and place in the prepared pan. Mixture will be less firm than a traditional meatloaf; this is normal. Glaze with extra barbeque sauce, if desired.
  • Bake in preheated oven until an instant-read thermometer inserted in the center reads at least 165 degrees F (74 degrees C), about 1 hour 15 minutes.

I got this out of the "365 ways to cook hamburg" cookbook. We made it and it was WONDERFUL! I only put in 1/2 the jalepeno because I did not want to make it spicey, but could not even taste it, So do not be afraid to add it.

  • Preheat oven to 350.
  • In a medium bowl, combine onion, bell pepper, jalapeno pepper, 1/2 cup BBQ sauce, rolled oats, corn, eggs, chili powder, worcestershire sauce.
  • and garlic salt.
  • add ground chicken and mix well.
  • Transfer to a 9x5x3 inch pan Bake 1 hour.
  • Spread remaining 1/4 cup of BBQ sauce over top pf loaf and bake until a meat thermometer inserted in center of loaf reads 160, about 15 minutes longer.
  • Let stand 5 minutes.
  • Drain off excess liquid and slice.

  • In a mixing bowl - combine the bell pepper, onion, ground chicken, seasonings, bread crumbs, eggs and 1/2 cup of the barbecue sauce.
  • I find the best way to mix everything for a meatloaf is to get my hands dirty and dig in! Smoosh and mash until everything is thoroughly mixed together. I know it's icky but somebody's got to do it.
