TURKEY CORNBREAD CASSEROLE
Prepared Betty Crocker cornbread & muffin mix is the perfect topper for this homey casserole made with ground turkey, salsa and enchilada sauce.

Steps:
- Heat oven to 350°F. Spray 2-quart casserole with cooking spray.
- In 12-inch skillet, cook turkey and taco seasoning over medium heat 8 to 10 minutes, stirring occasionally, until turkey is no longer pink. Remove from heat. Stir in beans, salsa and enchilada sauce. Spoon mixture into casserole.
- Make cornbread mix as directed on package, using milk, butter and egg. Stir cheese and cilantro into batter. Spread over turkey mixture.
- Bake 20 to 25 minutes or until cornbread is golden brown. Let stand 10 minutes before serving.

- Preheat oven to 350 degrees F (175 degrees C).
- In a large skillet over medium-high heat, saute the ground turkey for 5 to 10 minutes, or until browned. Drain the turkey, stir in the tomato sauce and sugar, and set aside. In a medium bowl, combine the sour cream and cream cheese. Mix well and set aside.
- Cook noodles according to package directions. Place them into a 9x13-inch baking dish, then layer the turkey mixture over the noodles. Then layer the sour cream mixture over the turkey, and top with cheese.
- Bake at 350 degrees F (175 degrees C) for 20 to 35 minutes, or until cheese is melted and bubbly.

EASY TURKEY-BBQ CASSEROLE
My dad made this originally w/ ground beef, But I wanted to make it healthier, so added ground turkey instead.

- Heat oven to 400. Spray a lg baking dish w/ cooking spra. Crumble the ground turkey into a lg skillet over med-high heat. Cook until browned.
- Add onion, bell pepper, corn and tomatoes to skillet. Cook, stirring until veggies are tender. Stir in BBQ sauce. Spread the turkey mix into baking dish.
- Prepare jiffy mix as directed. Spread batter evenly over turkey mix. Bake 25 min, or until a knife inserted in center comes out clean.

- Brown ground turkey breast; drain.
- Stir in salt through tomato sauce and set aside.
- To make the crust, stir together flour, cornmeal, sugar, tsp salt, and baking powder; cut in butter.
- Blend in 1/2 cup of cheese, milk, and egg.
- Spread crust mixture over the bottom & sides of nonstick 9-inch square baking pan or glass pie plate.
- Pour filling into crust.

- Preheat the oven to 400 degrees F (200 degrees C).
- Crumble the ground beef into a large skillet over medium-high heat. Cook until evenly browned. Add the onion, bell pepper, corn and tomatoes. Cook and stir until vegetables are tender.
