- Preheat oven to 375 degrees F (190 degrees C).
- Place sweet potatoes, olive oil, brown sugar, Cajun seasoning, and salt in a large resealable plastic bag; shake to coat potatoes evenly. Transfer mixture to a baking dish.
- Bake in preheated oven, stirring occasionally, until sweet potatoes are tender, about 1 hour.

HOT & SPICY SWEET POTATOES

- Peel the sweet potatoes and cut crossways into slices 2.5cm thick. Lay each potato on a large sheet of foil, keeping the slices together.
- Drizzle each potato with the olive oil, sprinkle with the thyme leaves, about half of the chopped chilli and season with plenty of salt and pepper. With your hands, massage the flavourings into each slice. Replace the slices in their original positions. Lay a thyme sprig across the top of each potato and sprinkle with the remaining chilli. Wrap the foil securely round the potatoes to make two parcels. (You can prepare to this stage up to 24 hours ahead.)
- Put the foil parcels on the rack over the hottest part of the barbecue and cook for 45 minutes until the potatoes are buttery and softened. (Unwrap and test with the point of a knife to check if they're ready).

- Preheat an oven to 425 degrees F (220 degrees C).
- Place the sweet potato chunks into a large mixing bowl. Drizzle with the olive oil, then sprinkle the brown sugar, paprika, black pepper, onion powder, garlic powder, poultry seasoning, chili powder, and cayenne pepper overtop. Toss until the potatoes are evenly coated with the seasoning. Spread onto a baking sheet.
- Bake in the preheated oven for 15 minutes, then turn the potatoes over with a spatula, and continue baking until the sweet potatoes are golden and tender, 10 to 15 minutes more.

- Preheat oven to 350.
- In medium sauté pan brown ground beef on medium heat. Drain.
- Add can of meatloaf starter with two tablespoons sugar and heat for five minutes.
- Prepare: Simply Potatoes as directed on package adding salt and pepper to taste.
- Prepare: corn as directed on package and drain if needed.
- Using 6 4 1/2 inch ramekins or 9x12-baking dish.
- Spray with non-stick spray.
- Divide meatloaf mix evenly in each ramekin. Next add ½ cup mashed potatoes followed by ¼ cup corn. Place all ramekins on foil lined cookie sheet and bake 25 minutes. Add ¼ cup cheese to each and bake another 10 minutes or until cheese melts.

Needed to come up with a last minute appetizer and had an extra bag of Simply Mashed Potatoes and some fresh ranch dressing on hand and simply improvised. They were all gone within 15 minutes. Can insert with fancy toothpicks for added presentation and ease of dipping and eating.

- Heat non-stick sautee pan over medium heat. Cut andouille sausage on the bias. When the pan is hot, add sausage and cook until edges are golden brown (about 4-5 minutes). Set aside.
- Slice green tomatoes into 1/2 inch slices. In the same pan, turn up the heat to medium-high and heat 1/2 tablespoon of butter making sure to scrape all the brown bits left by the andouille sausage. When butter is foaming, add tomato slices and sautee 2 minutes per side. Tomatoes should have nice browning on both sides. Set aside.
- Open Simply Potatoes Mashed Sweet Potatoes and divide potatoes into 6 round balls (more or less if you are doing small appetizers or larger entree with this recipe). Using your hands, form flat patties with sweet potatoes (each should be about 1/2 inch thick). Heat 1/2 tablespoon butter in a large non-stick pan over medium heat and add sweet potato cakes. Cook approximately 4-5 minutes per side flipping once.
- Heat last 1/2 tablespoon of butter in sautee pan over medium heat and cook shrimp until shrimp turns pink (about 2-3 minutes) flipping shrimp to cook both sides.
- Plate the dish by placing one sweet potato cake on plate, top with one slice sauteed green tomato, followed by andouille sausage slices, and finish with a few sauteed shrimp. Serve immediately.

- In a large bowl, combine mashed sweet potatoes and pepper jack cheese. Mix well.
- Using wet hands, form into popper shape, like small footballs about 1.5 inches long. Wet hands often to reduce sticking.
