We've all been there. You let your bananas get a little too ripe, and now it's time to figure out what to do with them. Our favorite way to use them is in Banana Bars! With a tender, cake-like base and mouthwatering cream cheese frosting, our Banana Bars recipe is a must-make. You didn't hear it from us, but Banana Bars with cream cheese frosting will fly off the plate, so make sure to save yourself a few before serving them.

Steps:
- Heat oven to 350°F. Grease bottom and sides of rectangular pan, 13x9x2 inches, with shortening. In large bowl, mix granulated sugar, bananas, oil and eggs with spoon. Stir in flour, baking powder, baking soda, cinnamon and salt. Spread in pan.
- Bake bars 25 to 30 minutes or until toothpick inserted in center comes out clean. Cool completely, about 1 hour.
- Meanwhile, in medium bowl, mix cream cheese, butter and vanilla with electric mixer on medium speed until blended. Gradually beat in powdered sugar with spoon, scraping bowl occasionally, until smooth and spreadable.
- Spread cooled bars with Cream Cheese Frosting. For bars, cut into 6 row by 4 rows. Store covered in refrigerator.

- Heat oven to 350°F. Spray 9-inch square pan with cooking spray. In small bowl, beat 1/2 cup butter, 1/4 cup granulated sugar and the vanilla with electric mixer on medium speed until well blended. On low speed, beat in 1 cup flour until soft dough forms. Press dough in bottom of pan. Bake 10 to 15 minutes or until center is set.
- Meanwhile, in 2-quart saucepan, cook filling ingredients over medium-high heat 5 to 10 minutes, stirring frequently, until figs are tender and most of liquid is absorbed. Spread over crust.
- In small bowl, mix 1/4 cup flour, the brown sugar and 3 tablespoons butter, using pastry blender or fork, until crumbly. Stir in oats and walnuts. Sprinkle over filling.
- Bake 15 to 20 minutes longer or until edges are bubbly and topping is light golden brown. Cool completely, about 1 hour. For bars, cut into 4 rows by 4 rows.

BETTY BARS
A recipe I haven't made in a while but whenever I do it gets rave reviews. I got it out of our local newspaper.

Steps:
- Place marshmallows, butter, 1 cup peanut butter and 1 cup chocolate chips in a 2 quart glass bowl.
- Microwave on high for 2 to 2-1/2 minutes.
- Stir until smooth.
- Stir in the peanuts, oats, and Rice Krispies cereal until well coated.
- Spread into a buttered 9x13 baking pan.
- Scrape bowl clean.
- In the same bowl, place remaining 1 cup chocolate chips, 2 Tablespoons peanut butter and 1 cup butterscotch chips.
- Microwave on high for 1-1/2 minutes.
- Stir until smooth.
- Spread on top of mixture in baking pan.
- Let stand until firm before cutting into bars.
FUDGE RIPPLE BROWNIE BARS
We've turned a classic ice cream flavor into a decadent bar. Fudgy Betty Crocker™ brownies get topped with a fluffy white chocolate layer that's rippled with chocolate syrup for an intriguing treat.

- Heat oven to 350°F. Spray bottom of 13x9-inch pan with cooking spray. Make brownie batter as directed on box for cakelike brownies. Stir in chocolate chips. Spread in pan.
- Bake 22 to 25 minutes or until toothpick inserted 2 inches from side of pan comes out clean. Transfer to cooling rack to cool completely, about 1 hour.
- In large bowl, beat cream cheese with electric mixer on medium speed until smooth. Decrease speed to low; slowly add 1/2 cup of the milk. Beat in dry pudding mix, scraping bowl as needed. Slowly with mixer running, add remaining 1 1/2 cups milk; beat until well blended. Beat in whipped topping. Spread on top of cooled brownie base. Drizzle chocolate syrup in random pattern over top of bar. Pull table knife through topping for ripple design.
- Refrigerate uncovered until set, about 4 hours. Cut into 6 rows by 4 rows. Store loosely covered in refrigerator.

- Heat oven to 350° F. Line 8-inch square pan with cooking parchment paper, leaving a few inches of overhang on 2 sides.
- Place 2 cups of the oats in large bowl. Add remaining 1/2 cup oats to blender or food processor; pulse into a rough flour. Add oat flour to bowl of oats. Add baking soda and salt to bowl of oats; stir.
- In microwavable bowl, microwave coconut oil uncovered on High just until melted. Stir in honey, sugar and vanilla; add to bowl of oats. Stir well to coat oats completely. Spread mixture evenly in pan; press down firmly and evenly.
- Bake 20 minutes. Oats should be golden and smell of honey. Cool on rack 10 minutes. Remove from pan using parchment overhangs. Cut into 8 rectangles while still warm. Cool completely before wrapping. The bars will firm and crisp up as they cool.
