SESAME RICE

THIS SIDE DISH is compatible with any meat entree you serve. One of my friends gave me this recipe many years ago. I made a few changes, and it has been a family favorite for a long time. This secret of the tasty flavor is the chicken broth. -Norma Poole Auburndale, Florida

Sesame Rice image

Steps:

  • In a medium skillet, saute sesame seeds in butter for 2-3 minutes or until golden. Add rice, celery and onion; saute until the rice is browned. Spoon into an ungreased 1-1/2-qt. baking dish. Dissolve bouillon and salt in water; pour over the rice mixture. Cover and bake at 325° for 50-60 minutes or until rice is tender.

1 chicken bouillon cube

Black Sesame Rice image

Steps:

  • Bring rice and water to a boil in a 1 1/2- to 2-quart heavy saucepan. Cover pan and cook rice over low heat until tender and most of water is evaporated, about 30 minutes.
  • Let rice stand, covered, off heat 10 minutes. Fluff with a fork, then stir in sesame oil and salt and pepper to taste.

3/4 cup Forbidden Rice*
1 1/2 cups water
2 teaspoons Asian sesame oil
*Available at specialty foods shops and by mail order from Kalustyan's (212-685-3451).

JASMINE RICE TIMBALES WITH BLACK AND WHITE SESAME SEEDS

Look for the black sesame seeds in the Asian foods section of a specialty market; they add a dramatic touch to this simple side dish. If you can't find them, just use all white seeds instead.

Jasmine Rice Timbales with Black and White Sesame Seeds image

Steps:

  • Combine rice, 1 tablespoon butter, 1 teaspoon sesame oil, 2 1/2 cups water and 1/4 teaspoon salt in large saucepan. Bring to boil. Reduce heat to low. Cover and simmer until rice is tender, stirring once, about 15 minutes.
  • Add remaining 1 tablespoon butter, chives and sesame seeds to rice. Fluff with fork. Cover and let stand 5 minutes. Fluff rice again. Season to taste with salt and pepper.
  • Brush six 3/4-cup soufflé dishes or custard cups with remaining 2 teaspoons sesame oil. Divide rice among dishes. Pack rice tightly into dishes. Turn timbales out onto plates and serve.

  • Place a rack in center of oven; preheat to 350°. Generously grease an 8" or 9" round pan with butter. Line bottom with parchment and grease parchment with butter.
  • Toast black sesame seeds in a dry large skillet over medium heat, stirring frequently, until fragrant and just starting to crackle, 2–3 minutes. Transfer to a food processor or blender. Pulse, scraping down sides as needed, until seeds are finely chopped but haven't formed a paste. This could take as long as 2–3 minutes in a food processor, or 1–2 minutes in a high-speed blender.
  • Scoop out ¼ cup ground sesame seeds; set aside. Add ¾ cup sugar to food processor and pulse until sugar is a uniform gray and no lumps of sesame remain. Transfer to a large bowl. Sprinkle some sesame sugar all over sides and bottom of prepared pan (as if you were flouring it). Tap pan so sesame sugar coats sides and bottom in a thin layer; this will form a crust, which will help the cake release. Tap out any excess back into bowl. Add flour, baking powder, and ½ tsp. salt to bowl and whisk to combine.
  • Whisk eggs and ¼ cup melted butter in a medium bowl until creamy and emulsified, about 30 seconds. Whisk in milk, vanilla, and ½ cup cream. Add egg mixture to dry ingredients and stir to combine.
