Steps:
- Using a vegetable peeler, remove zest from orange and 1 lemon in wide strips, leaving white pith behind; slice fruit in half. Squeeze juice from orange into a small bowl (you should have about 1/4 cup). Squeeze juice from lemon into a measuring glass. Slice remaining lemons in half and squeeze juice into glass to measure 1 cup total; save any remaining lemon halves for another use. Set orange and lemon juice aside.
- Place zest in a small saucepan. Whack cinnamon sticks with the side of a chef's knife to break up a little and add to saucepan along with smashed ginger, tea bags, cloves, and 1 3/4 cups water. Bring to a boil and immediately remove from heat; let sit 5 minutes. Remove tea bags, then stir in honey; let cool completely, about 20 minutes.
- Strain tea mixture through a fine-mesh sieve into a pitcher and add rye, bitters, and reserved orange juice and lemon juice. Add 2 cups ice and stir until ice is melted and toddy is very cold.
- To serve, pour toddy into tumblers filled with ice and garnish with ginger slices and orange twists.
- Do Ahead
- Tea mixture can be made 3 days ahead; cover and chill. Toddy can be made 1 day ahead; cover and chill.
LONG ISLAND ICED TEA
As white light is the combination of all wavelengths of color visible to the human eye, so too is Long Island iced tea the rainbow of high-proof liquors mixed into a balanced cocktail. When done right, it's surprisingly bright and refreshing. A prism of vodka, gin, rum, tequila and triple sec, this batch variation - ideally served in a pitcher - is a cooling blitz of a drink, reminiscent of the best parts of a whiskey sour, or a hot summer's day. Fresh lemon and lime juice bring sourness and bitterness, and a splash of cola and a bit of maple syrup round things out.

Steps:
- In a large pitcher, combine the ice, vodka, gin, rum, tequila, triple sec, maple syrup, lemon juice and lime juice. Add the salt, which accentuates all of the flavors. Stir with a wooden spoon until the pitcher feels cold to the touch and the ice has dissolved slightly, about 30 seconds. Top with the Coca-Cola.
- To serve, pour the cocktail into individual glasses filled with fresh ice, and garnish with lemon and lime slices. Sprinkle with more salt, if you'd like.
WHISKY TEA
This is how my grandad makes his cups of tea. He's in his seventies now and drinks whisky like he'll never get hold of it again. This drink is very relaxing and a great way to sedate family members and friends.

ROOT BEER RICKEY
Spicy, spritzy and refreshing, this cocktail is essentially grown-up root beer. A classic rickey is just liquor, lime juice and carbonated water, but reach for rye whiskey and trade the soda water for root beer, and you get the root beer rickey, a drink bartender Jim Meehan created for Cicoria, a pizzeria in Portland, Ore. Root beer and rye are natural partners, as each is woodsy, minty and caramelly; the soda also lends sweetness without having to add sugar. At Cicoria, the drink is served up in a short glass and garnished with a pineapple wedge, but this easygoing rendition opts for ice in a tall glass with more root beer. Add a lime wedge, if you like.
