  • In a bowl, beat one package if cream cheese with milk and sour cream until smooth. Spread into a 9-in. pie plate lined with plastic wrap. Sprinkle with chopped pecans. , In a bowl, beat Brie, Swiss, blue cheese and remaining cream cheese until thoroughly combined. Gently spread over chopped pecans, smoothing the top to form a flat surface. Cover and chill overnight or up to 3-4 days., Before serving, invert onto a plate and remove plastic wrap. Arrange pecan halves on top. Serve with apples or crackers.

Steps:

  • In a large bowl, carefully mix the meats, bread crumbs, steak sauce, eggs, salt, and pepper with the tines of a fork, but do not mash them. Lightly form into 8 to 10 hamburger patties and press lightly into shape.
  • Prepare a charcoal or a stove-top grill.
  • Cook the hamburgers for 4 minutes on 1 side, then turn and cook 3 minutes on the other side for medium-rare. Remove to a plate and cover with aluminum foil. Allow the hamburgers to rest for 5 minutes. Meanwhile, grill the buns, cut side down, for 1 minute, until toasted. Place a hamburger and a slice of blue cheese in each bun, plus arugula and tomato, if desired, and serve hot.

Steps:

  • While the pasta is boiling: Melt butter in sauce pan over med-low.
  • Add onion and garlic saute about 5 minutes.
  • Pour in half& half, let heat through.
  • Wisk in blue and parmesan cheeses.

  • Sauce will thicken a bit upon standing.
  • Toss with cooked pasta.

Chicken Liver and Blue Cheese Pate image

Steps:

  • Line 2 cup dish or mold with plastic wrap, leaving overhang.
  • Melt butter in large skillet over medium-high heat. Add onions and saute until beginning to brown, about 6 minutes.
  • Sprinkle livers with salt and pepper. Add livers and thyme to skillet. Saute until livers are no longer pink in center, about 10 minutes. Remove skillet from heat. Add brandy; scrape up any browned bits.
  • Place contents of skillet in food processor. Add cheese and blend until smooth. Season to taste with salt and pepper.
  • Pack pate into prepared dish. Cover and chill in refrigerator for 1 day. Unmold to serve with cracker or baguette rounds.

  • Prepare bleu cheese dip by placing bleu cheese, cream cheese, vinegar, olive oil, and pepper in a food processor and mixing until well combined. Drizzle in milk 1 Tbsp at a time while mixing until desired consistency is achieved. It should be thick like frosting. Scoop into a large plastic bag and set aside.
  • Sauté asparagus and/or red onion in a large saucepan over medium heat until tender. Season with salt and black pepper. To properly caramelize the onions, make sure to keep the lid on to lock in moisture and get them really soft. Set aside.
  • Prepare balsamic reduction by placing balsamic vinegar in a small saucepan over medium heat, stirring occasionally and being careful not to boil. Cook for about 10 minutes or until the liquid has reduced by about half and a wooden spoon scraped across the bottom leaves a visible line – it should appear somewhat “syrupy.” Pour into a small ramekin for serving.
