TO DIE FOR BLUEBERRY MUFFINS
These muffins are extra large and yummy with the sugary-cinnamon crumb topping. I usually double the recipe and fill the muffin cups just to the top edge for a wonderful extra-generously-sized deli style muffin. Add extra blueberries too, if you want!

BLUEBERRY CREAM MUFFINS
When most people think of Maine, they immediately think of lobster. But we who live here know of something equally as good: wild blueberries. Their flavor is unmatched, and they're especially great in these blueberry muffins with sour cream. -Lillian Van der Harst, Center Lovell, Maine

My mom used to bake blueberry muffins for breakfast, and they were one of my absolutely favorites. As all muffins should be, these are creamy, not dry, with a nice crumb.

Steps:
- Pre-heat oven to 325 F. In the bowl of a stand mixer, combine butter and sugar on low gear. Meanwhile, in a separate bowl, combine ¾ C flour, baking soda, powder and salt. Set aside. To the butter/sugar mixture add egg and vanilla. Add dry ingredients and continue mixing until just combined, then add the sour cream. In a small bowl, toss frozen blueberries with remaining ¼ cup flour and using a spatula, gently fold into batter. Note: Please refer to the written recipe for measurements as they've been adjusted from the video.
- Make the streusel by combining the flour, sugar, almond flour and salt in the bowl of a food processor, then add the diced, cold butter, mixing until it there aren't pieces of butter. Set aside. Using an ice cream scoop, distribute batter into a 12-cup standard muffin tin with liners. If the batter is sticking to the scoop, dip in water. Sprinkle a teaspoon of streusel mixture on each muffin. Bake 25 minutes until muffins are puffed and golden brown. Note: Please refer to the written recipe for measurements as they've been adjusted from the video.
- Check for "doneness" by sticking a knife into the center of a muffin. It should come out clean. When cool, finish with a sprinkle of powdered sugar.

- Using the paddle attachment on your electric mixer, beat the butter and sugar with until light and fluffy. Add in the egg, and beat well. Next, add in the crème fraîche and lemon zest.
- Put flours, baking powder, baking soda and salt into a sifter and sift half of the dry ingredients over batter. Mix just until combined. Sift the remaining dry ingredients into batter and mix just until the flour disappears (don’t over-mix).
- Gently fold in the blueberries. The mixture will be quite thick (and even thicker, if you used a full-fat Greek-style yogurt), similar to a cookie dough, which is why an ice cream scoop (I used a 1.5 ounce scoop) is a great tool to fill your muffin cups. You’re looking for them to be about 3/4 full, nothing more, so you might only need less than 12 cups.

- Preheat oven to 375°F. Prepare the topping by mixing all the ingredients in a bowl until it turns into uniform clumps. Refrigerate until ready to sprinkle on muffins.
- Prepare regular muffin tins with 7 LARGE liners. (You can bake regular sized muffins by dividing it into 12) There is a link in the blog post for the copper moulds I used, but they are just as good made in regular tins.
- Cream the butter, sugars and zest together on medium speed, in a stand mixer with the paddle attachment, until light and fluffy, about 4 minutes. Add vanilla. Add the egg and yolk, one at a time, mixing on low just until combined. It may seem a bit curdled, because it is a lot of liquid to add to that amount of butter. It will all come together in the end.
