BACON AND ASPARAGUS FRITTATA
My frittata makes a marvelous light meal. especially during the summer. When I prepare the frittata for guests, I also serve rice and bread to make a hearty meal-quick and easy, but it always wins compliments! -Gwen Clemon, Soldier, Iowa

Steps:
- In a 9- or 10-in. ovenproof skillet, cook bacon until crisp. Drain, reserving 1 Tbsp. drippings. Heat reserved drippings on medium-high. Add asparagus, onion and garlic; saute until onion is tender. Crumble bacon; set aside a third. In a large bowl, combine remaining bacon, eggs, parsley, salt and pepper. , Pour egg mixture into skillet; stir. Top with tomato, cheese and reserved bacon. Cover and cook over medium-low until eggs are nearly set, 10-15 minutes. Preheat broiler; place skillet 6 in. from heat. Broil until lightly browned, about 2 minutes. Serve immediately.

AIR-FRYER BACON-WRAPPED ASPARAGUS
Steps:
- Preheat air fryer to 400°. Coat asparagus with cooking spray. Sprinkle with pepper; turn to coat. Wrap a bacon piece around each spear; secure ends with toothpicks. , Place asparagus on greased tray in air-fryer basket. Cook until bacon is crisp, 5-7 minutes on each side. Discard toothpicks.

Easy-to-prepare appetizer. Laurita has a good idea so the asparagus does not over cook, to pre-cook bacon a little. So try my Recipe #187790 to avoid over cooking asparagus.

Steps:
- Wash and trim asparagus spears.
- Cut bacon strips in half crosswise.
- Wrap one-half strip bacon around each asparagus spear, leaving tip and end exposed.
- Lay on a cookie sheet with sides.
- Bake in a preheated 400 degree Fahrenheit oven for 20 to 25 minutes, or until bacon is cooked.
- Serve warm or at room temperature.
- **Note: You may want to try my Baked Bacon recipe #187790 for 10 minutes, to avoid over cooking asparagus.
BOB'S FAMOUS BACON ASPARAGUS
I had these for the first time ever about 2 years ago on Christmas Eve at my sister's house. It's our Christmas Eve family "thing" to spend the day there with the "immediate families" ... my parents, my sister, brother-in-law, their girls, myself, my fiance and my 3 kids. Anyway ... Bob is my brother-in-law, and he made these awesome treats for the snack tray. I HATE asparagus, and usually don't care much for bacon ... but these are AMAZING!! Super easy to make, and even the kids LOVE them!

- Wrap one piece of bacon around one asparagus stalk (wrap at an angle, to cover the stalk). Fasten at both ends with toothpicks. Repeat until supplies are gone. ;)
- Spray grill with no-stick spray. Grill asparagus until bacon is cooked and crispy, turning over once.
- Remove toothpicks, and serve hot.

- Combine minced garlic in a small bowl with 3 Tbsp olive oil and set aside while preparing your asparagus and gathering the rest of your ingredients.
- Break off the fibrous ends of your asparagus by holding the base end and snapping it wherever it snaps. Discard the ends. I like this method most because it ensures that you won't have any fibrous ends. You can also use a knife to cut the ends off about 1" up from the base.
- Transfer asparagus to a rimmed baking sheet then drizzle and toss it with the garlic oil. Sprinkle lightly with salt & pepper and bake at 400°F for 13-18 mins (depending on the thickness of asparagus) or until lightly browned and easily pierced with a fork.
- While baking, saute 6 strips of bacon, drain on paper towels then coarsely chop. Serve asparagus warm and sprinkle the top with bacon.
