BODACIOUS BBQ BABY BACK RIBS
These ribs always get raves! They are tender and moist, and the homemade BBQ sauce is scrumptious! These are very similar to the ribs that are served at Applebee's. I actually found this recipe in a magazine and have been hooked on these bodacious ribs ever since!

Steps:
- Cover ribs with water in a large saucepan.
- Bring to a boil, then lower heat, cover, and simmer for one hour, or until ribs are tender.
- Mix all ingrediants in saucepan and bring to a boil, lower heat, and simmer for 30 minutes, until sauce has slightly thickened (stir often).
- Preheat broiler.
- Line broiler pan with foil.
- Place ribs on foil, meat side down, and baste with sauce (reserving 1/2 of the sauce).
- Broil for 6 minutes, then turn ribs over.
- Baste with remaining sauce and broil for an additional 6 to 7 minutes (or until edges are slightly charred).
- Serve with BBQ beans and corn on the cob and your palette will be especially pleased!

GRILLED BABY BACK RIBS

- Turn the ribs bone-side up. Slip a paring knife between the thin membrane and the bone to loosen, then pull off the membrane. Mix the brown sugar, paprika, steak seasoning, cumin and oregano in a small bowl; rub all over the ribs. Place on a baking sheet, cover with plastic wrap and refrigerate at least 6 hours or overnight.
- Preheat a grill to medium high and prepare for indirect grilling: For a gas grill, turn off one or two of the center burners and reduce the remaining burners to medium low. On a charcoal grill, bank the coals to the sides, leaving the center open; set up a drip pan to avoid flare-ups.
- Oil the grill grates. Place the ribs bone-side down, overlapping slightly if needed, on the cooler part of the grill (indirect heat). Cover and cook, rotating the rib racks once, until the meat is tender and pulls away from the bones, about 2 hours to 2 hours 15 minutes.
- Mix the honey, vinegar and a pinch each of salt and pepper in a small bowl. Transfer the ribs to direct heat. Brush with the honey mixture and continue to grill, uncovered, brushing with the honey mixture once more, until glazed, 5 to 10 minutes. Transfer to a cutting board and cut into ribs.
GINGER BBQ SAUCE

- Heat the oil in a skillet over medium low heat. Saute the onions until soft, about 5 to 7 minutes. Add the ginger and cook for 1 minute to release the aromas.
- Add the vinegar and simmer to reduce by half. Add barbecue sauce, brown sugar and pepper and simmer, stirring occasionally, until sauce thickens, about 15 minutes. Place the sauce in a blender and puree.

- 2. Continue on a low simmer until it cooks down to the consistency you wish.
- 3. * chile honey (found in NM. I'm not sure you can find this other places, but it's wonderful if you can. substitute with the above listed heat alternatives, but do add a couple of tbsp of honey to bring up the sweetness if not using.)
BAKED BBQ BABY BACK RIBS

- Preheat oven to 250 degrees F (120 degrees C).
- Mix ancho chile powder, white sugar, brown sugar, salt, black pepper, cumin, dry mustard, cayenne pepper, and chipotle pepper in a small bowl until combined.
- Place ribs meat-side down on aluminum foil. Prick back of rib rack several times with a knife.
- Generously apply coating of dry rub to all sides of rib rack.
- With rib rack meat-side down, fold foil around it to create a tight seal. Transfer to sheet pan.
- Bake in preheated oven until tender and cooked through, about 2 hours. Remove and cool 15 minutes.
- Increase oven temperature to 350 degrees F (175 degrees C).
- Open foil, drain and discard any accumulated juices and fat. Brush barbeque sauce on all sides of rack.
- Place rack meat-side up and return to oven, leaving foil open. Bake for 10 minutes, remove from oven, and brush another layer of barbeque sauce on meat-side only. Repeat baking and brushing with sauce 4 more times, for a total of 50 minutes baking time.
- Cut rack into individual rib segments and serve with more barbeque sauce.

BODACIOUS BABY BACKS W/ GINGER KISSED BARBECUE SAU
Steps:
- 1. In large stockpot heat Dr. Pepper, ginger, orange juice, pepper and salt. Reduce mixture to syrup like consistency by cooking over low heat, approximately 45 minutes. Let mixture cool and transfer to large Ziploc bag, add ribs to bag. Marinate ribs in syrup in refrigerator over night. 2. Combine rib rub ingredients together in small bowl. Remove ribs from syrup and season with rib rub. Prepare barbecue pit to medium, arrange ribs on barbecue and grill until ribs are tender (about 40 minutes). Turn ribs with tongs during grilling process. Transfer ribs to work surface. 3. While ribs are grilling, make barbecue sauce by cooking bacon in stock pot. When crisped add shallots, garlic and ginger and cook for about 3 minutes. Add remaining ingredients, stir, bring to a boil and reduce heat to simmer. Let simmer for15 minutes. 4. Cut ribs into individual pieces and place on pretreated baking sheet, brush ribs with barbecue sauce and place baking sheet on grill. Grill ribs until brown and crisp on edges, turning and reapplying barbecue sauce during cooking process, about 12 minutes. Serve ribs warm with additional sauce for dipping.
