- Preheat oven to 350°F. Mix all ingredients together, except the bread slices and sauce. Shape into a loaf. Line a 1 1/2-quart loaf pan with the bread slices. Place meatloaf on top. Bake loaf for 45 minutes. The bread absorbs the grease and should be discarded after loaf is removed from oven. SAUCE: Heat the soup and milk over medium heat; add the cheese. Add the chopped onions and parsley to the sauce, if desired. Pour sauce over the meatloaf or pass at the table.
CHEESY MEAT LOAF PIE
This is a tasty cross between meat loaf and pizza. Often, I divide it into two pans, bake one for me and freeze the other. That way, I'm ready for drop in company or potluck suppers. Tomato paste or spaghetti sauce can be substituted for ketchup in my meat pie. Cheese lovers might want to add mozzarella to the topping as well.-Judy Foye, Freeport, Maine

- In a large bowl, combine the milk, bread crumbs and garlic salt. Crumble beef over mixture and mix well. Press onto the bottom and 1 in. up the sides of a greased 9-in. pie plate. , Bake, uncovered, at 350° for 20 minutes; drain. Spread with ketchup. Sprinkle with the cheddar cheese, oregano and Parmesan cheese. Bake 3-5 minutes longer or until meat is no longer pink and a thermometer reads 160°.

- Preheat oven to 350 degrees F (175 degrees C). Oil a 9x5-inch loaf pan.
- Place the onion and carrots into a saucepan, and pour in the beef broth. Bring to a boil over medium heat, and reduce heat to a simmer; cook, stirring often, until the vegetables are tender, about 8 minutes. Set the veggies and broth aside.
- In a large bowl, beat the eggs, and stir in bread crumbs, basil, salt, and black pepper. Allow the mixture to stand for 5 minutes to moisten the crumbs, and lightly mix in the turkey, beef, and pork sausage. Mix in the cooked onions, carrots, and beef broth. Place the mixture into the prepared loaf pan. In a bowl, mix the tomato soup, balsamic vinegar, and Dijon mustard together, and spread the mixture over the meat loaf.
- Bake until the loaf is no longer pink in the center and an instant-read meat thermometer reads at least 160 degrees F (70 degrees C), about 1 1/2 hours.

- Preheat oven to 350 degrees F (175 degrees C).
- In a large bowl combine the beef, pork, soup mix, eggs, bread crumbs, pepper and water. Stir in 1/2 cup of the cheese. Mix well and spread half of mixture into a 9x5 inch loaf pan. Spread remaining 1 1/2 cups cheese over meat loaf mixture. Top with remaining half of meat loaf mixture.
- Bake in preheated oven for 60 minutes. Let cool 10 to 15 minutes before serving.

This recipe came from a Taste of Home cookbook. This meatloaf is so amazingly good, I can't even explain it! I love cheese and I have never seen a meatloaf recipe that has cheese just seeping out, and the different meats make it wonderful! Oh, it's good. My hubby raved about this one. It's also great on sandwiches the next day!

Steps:
- Combine the meats in the food processor until blended evenly.
- Stir the other ingredients in by hand.
- (If you don't have a food processor, then mash all the meat together with a large fork or by hand and then put in mixer. Mix all the other ingredients in by hand).
- In a shallow baking pan, shape the mixture into an 8-1/2x4-1/2x 2-1/2 inch loaf. Bake at 350°F for 1-1/4 hours.
- Let it stand for a few minutes before serving.

- Saute onion till softened. Then add the garlic and thyme.
- In a separate bowl, combine the meats until thoroughly mixed. Add breadcrumbs and onion mixture. Mix well.
- In a small bowl, combine the milk, egg, and ketchup. Add to the meat mixture. Mix well.
- Shape into a loaf and place in a meatloaf pan.
- Bake at 350 degrees for 90 minutes or until the internal temp is 180 degrees.
