STEVE'S BODACIOUS BARBECUE RIBS
These make real mouth-watering 'Pig-cicles'! They take a while to cook, and when you eat them, you'll have pork fat smeared from ear to ear! Mmm! Mmm! I like to smoke with hickory wood, but any of your favorite will suffice.

Steps:
- In a medium bowl, stir together paprika, cayenne pepper, garlic powder, onion powder, salt, ground black pepper, cumin, brown sugar, cinnamon, cloves, and nutmeg. Apply liberally to the ribs. Place ribs in a large roasting pan, cover, and refrigerate overnight. Remove ribs from the refrigerator 1 hour before smoking.
- Prepare an outdoor smoker, bringing the temperature to 200 to 225 degrees F (95 to 110 degrees C).
- Smoke ribs for 6 to 8 hours, adding wood chips to maintain a steady smoke (approximately one handful every 30 to 45 minutes). Ribs are done when crispy outside and tender inside. Remove from smoker, and set aside for 15 to 20 minutes before serving.

SOUTHERN GRILLED BARBECUED RIBS
These ribs will have the smoky flavor without all the grilling time. It takes just 30 minutes on the grill to give the ribs that smoky flavor Southerners expect. You can use this recipe for spare ribs too, just bake for 15 minutes longer.

BODACIOUS GRILLED RIBS
I got the original recipe from an Aldi's Great Grillin' Cookbook a few years back. It calls for pork spare ribs, but I also use it on beef back ribs, just increase the cooking time. I have modified it some from the original one. I also cooked this in the last restaurant I worked at.

Steps:
- 1. 1. Prepare grill for direct cooking. Cut ribs into 4- to 6-rib pieces. Spray 2 sheets (24X18 inches) aluminum foil with no stick cooking spray.
- 2. Combine paprika, basil, onion powder, garlic powder, red pepper and black pepper in small bowl.
- 3. Rub on both sides of rib pieces. Place half of ribs, in single layer, in center of each foil sheet.
- 4. Place 4 ice cubes on top of ribs. Double fold sides and ends of foil to seal packets, leaving head space for heat circulation. Wrap each foil packet with another sheet of foil. Place on baking sheet.
- 5. Slide packets off baking sheet onto grid over medium heat.
- 6. Grill, covered, 45 to 60 minutes or until tender. Carefully open one end of each packet to allow steam to escape.
- 7. Stir together BBQ sauce and preserves. *I use Kraft Honey BBQ Sauce. **I use homemade wild plum or apple or muscadine or grape.
- 8. Open packets; transfer ribs to grid. I just leave on the foil, so the BBQ grill doesn't get gunked up.
- 9. Brush with sauce mixture. Continue grilling 15 to 20 minutes, per side, brushing with sauce and turning often until glazed.
- 10. Enjoy!
BARBECUE RIBS
This recipe is easier than it sounds. I usually cook the ribs the day before and grill them for a quick dinner the next night. FYI: the sauce is much better after it is cooked. It is not a dipping sauce.

BODACIOUS BBQ BABY BACK RIBS
These ribs always get raves! They are tender and moist, and the homemade BBQ sauce is scrumptious! These are very similar to the ribs that are served at Applebee's. I actually found this recipe in a magazine and have been hooked on these bodacious ribs ever since!

- Prep the meat. Most store-bought ribs have what’s known as silverskin, a membrane over the underside of the ribs. Sometimes, if you’re lucky, your butcher will remove it for you.
- Make the marinade. Pork is tasty as is, but marinating before cooking ribs on a charcoal grill enhances the flavor. It adds a deep savoriness that makes the meat more satisfying and delicious.
- Treat the meat to a spice rub. Trust us: You want to add the spice rub. Like making the marinade, it’s simple to prep, just tossing some ingredients together in a bowl.
- Grill. Here’s the real secret to how to grill ribs: Cook them over indirect heat, and give them time. This lets the connective tissue melt away, leaving you with perfectly tender, toothsome ribs.
- Test for doneness. We’ve all heard the old saying: Ribs should “fall off the bone.” But should your ribs really fall off the bone? Our Test Kitchen experts say no. We can all agree that chewy ribs are no fun, but if the meat is literally falling off the bones, then the ribs are overcooked and might be dry.
