BONNIES FRIED FISH (SOLE, CATFISH OR TALAPIA)

I had a request from a member for a simple and easy recipe for fried fish. If you like crisp, crunchy fish, then this recipe is for you. I use this for sole, catfish or talapia. This is the recipe that I use all the time. My family loves it, and I have tried other batter recipes, but I keep coming back to this tried and true old favorite. I hope you enjoy it! This humble recipe is my own and so is the photo.

BONNIES FRIED FISH (sole, catfish or talapia) image

Steps:

  • I use an electric skillet, but you can use a non-stick skillet. Pour in about 1/4 inch corn oil in the skillet over medium heat, or if using an electric skillet set it at 350 degrees, add a few drops of water and wait for it to sizzle and pop. When it starts to popping, it is hot enough to add the breaded fish.
  • Combine the 1 cup of cornmeal and the 1 tablespoon of black pepper in a shallow pie plate. Dredge the prepared filets in the mixture on both sides of the fish and carefully put into the hot corn oil.
  • Fry until nice and golden brown on both sides. Remove to a platter, sprinkle with salt and serve immediately.
  • Cook's tip: I like to buy frozen filets for convenience, but fresh catfish, sole or talapia filets will work, too. I serve this with my Best Oven Baked Fries and Potato Wedges, and my Simple Romaine and Lettuce Salad, also on this site. Enjoy!

Steps:

  • Season fillets with salt and pepper. Dust with 1/3 cup of flour.
  • Beat buttermilk and egg in a bowl. Combine remaining flour, cornmeal, seafood seasoning, baking powder, and baking soda in another bowl. Dip all flour-dusted fillets into egg mixture, then into seasoned flour mixture.
  • Heat oil over medium-high heat in a large frying pan or deep fryer. Fry fillets, working in batches if needed, until golden, about 2 minutes on each side. Season again with salt as soon as your take them out of the pan or fryer.

FRIED FISH FILETS - CATFISH, TALAPIA

I worked at a hospital for years and the cafeteria served crispy fried catfish nearly every Friday. I asked the manager for the recipe.. She just gave me the basics.... cornmeal, flour, salt, black pepper and paprika...dip in milk and deep fry. The breading is what makes it taste so good.

Fried Fish Filets - Catfish, Talapia image

Steps:

  • Combine breading ingredients in gallon size ziplock bag. Shake to mix together well.
  • Melt shortening or oil in skillet until hot.
  • Place filets in milk. Remove and salt both sides, according to taste.
  • Place 2-3 filets in bag and shake until coated. Remove from bag and dip again in milk.
  • Place fish in ziplock bag for a second coating. Repeat this process for remaining pieces.
  • Fry 3 pieces of fish in hot oil (iron skillet) for approximately 6-7 minutes on each side until done and golden brown. Repeat with remaining filets.

BREADING
1 1/2 cup(s) yellow cornmeal, stone ground preferred
1/2 cup(s) all purpose flour
1/2 teaspoon(s) salt

Steps:

  • Beat the egg with milk in a shallow bowl. In another shallow bowl, mix together the bread crumbs, roasted onion flakes, garlic, blackened seasoning, crushed red pepper flakes, black pepper, and sea salt.
  • Dip a tilapia fillet into the egg mixture, then press gently into the crumb mixture on both sides; set the coated fillet onto a plate. Repeat with remaining fillets; refrigerate the coated fillets for about 15 minutes to help set the crumbs.
  • Heat the olive oil and butter in a cast-iron frying pan over medium heat. Lay the fillets into the skillet, and pan-fry until golden brown on each side, about 3 minutes per side. The fish should be opaque and flaky underneath the coating. Remove and drain fillets on paper towels.
