Add the ham and cook until warmed through, about 2 minutes. Add the flour and cook, stirring, until moistened, 1 minute. Add the half-and-half and bring to a boil, then reduce to a simmer and cook until slightly thickened, about 2 minutes. Stir in 1 cup fontina until melted.
- Meanwhile, preheat the broiler and bring a large pot of salted water to a boil. Add the pasta and cook as the label directs for al dente, adding the peas in the last 2 minutes of cooking. Reserve 1/2 cup cooking water, then drain the pasta and peas.
- Add the pasta and peas to the skillet and toss to coat, adding the reserved cooking water as needed to loosen; season with salt and pepper. Top with the remaining 1 cup fontina and the parmesan. Broil until lightly browned, 4 to 5 minutes.

BOW-TIE PASTA WITH HAM, LEEKS AND PEAS
I substituted some sausage links for the ham and green beans with almonds for the peas. I also used whipping cream instead of half-and-half. This was an easy recipe that is also quite good. Recipe courtesy of All You April 2014.

- In a large pot, boil water and cook pasta according to directions on the package. Note: I always undercook pasta by 1-2 minutes per the package... they always over cook it. About 3 minutes before the cooking time is up, add the frozen peas. Test the pasta and if al dente, turn off the heat. Use a glass measuring cup to remove a little more than a 1/2 cup of cooking water and set aside.
- Drain the pasta and peas in a colander. Dice the ham steak into 1-inch pieces and grate the parmesan.
- Add the pasta and peas back into the cooking pot with the diced ham, ricotta , parmesan, minced garlic, black pepper, Italian seasoning, salt and red pepper flakes. Pour in 1/4 cup of reserved pasta water and stir together. Add more pasta water as needed to create a saucy pasta.
