BEER BRATS
These awesome beer brats are boiled and then put on the grill!

- Preheat an outdoor grill for medium-high heat. When hot, lightly oil grate.
- Combine the beer and onions in a large pot; bring to a boil. Submerge the bratwurst in the beer; add the red pepper flakes, garlic powder, salt, and pepper. Reduce heat to medium and cook another 10 to 12 minutes. Remove the bratwurst from the beer mixture; reduce heat to low, and continue cooking the onions.
- Cook the bratwurst on the preheated grill, turning once, 5 to 10 minutes. Serve with the beer mixture as a topping or side.

BRATWURST SUPPER
After trying a few bratwurst recipes, I've found this meal-in-one is ideal for camping since it grills to perfection in a heavy-duty foil bag. - For each of 2 foil packets, arrange a double thickness of heavy-duty foil (about 17x15 in.) on a flat surface. , Cut brats into thirds. Divide the brats, potatoes, carrots, onion and mushrooms evenly between the 2 double-layer foil rectangles. Dot with butter. Sprinkle with soup mix, soy sauce and pepper. Bring edges of foil together; crimp to seal, forming 2 large packets. Seal tightly; turn to coat., Grill, covered, over medium heat for 23-28 minutes on each side or until vegetables are tender and sausage is no longer pink. Open foil carefully to allow steam to escape.

BRATS--OUR STYLE
My husband and I used to boil brats in beer in the house before grilling, but have discovered that this method keeps them juicier and keeps the house from smelling like a brewery! Living in Wisconsin, we make these often during the summer and also a few times during the winter, when it's much less convenient to grill! We've been making all our brats this way for the past two or three years. We normally buy the large three pound packages of Johnsonville brats early in the summer and stock the freezer when the price is right, but this will certainly work for any other brat as well! Our children, ages 4 and 5, prefer these to hot dogs hands-down, and will sometimes each devour two of them in one meal! We like to serve these with corn on the cob, foil potato packets, grilled zucchini, or any other vegetable we can grill while the brats simmer! This is listed as 12 servings because there are 12 brats, but most people enjoy at least two brats!

- Grill the brats on your BBQ grill over medium heat, turning occasionally and monitoring carefully so that you don't split the skins. We like ours a little on the darker side, but grill to your own preference. This typically takes us about 15 minutes.
- Pour two of the bottles of beer into a 9 x 13 cake pan, and place on the grill (We use an old one that we're not worried about staining or anything, but the disposable foil ones would work as well if you don't want to ruin a good pan).
- Add onions, garlic, and brats to the cake pan.
- Add as much of the third bottle of beer as possible, leaving a little room at the top so it won't boil over.
- Simmer on the grill while cooking the veggies or anything else for your meal on the other side of the grill. Start out at medium heat, and adjust down as necessary to avoid cooking too hard and splitting the brats open. They should just simmer lightly for 30-45 minutes for great flavor. Add additional beer as necessary. We usually boil until the beer is almost gone, but do not allow to boil completely dry!
- Remove the brats from liquid to serve as needed, allowing remaining brats to 'hang out' and stay hot in the liquid until needed. Serve on buns with desired toppings and garnishes. My favorite is with ketchup and mustard and cold sauerkraut, but my husband likes pickles or relish on his, and the kids are content with just ketchup, sometimes with a bun, sometimes without.
- Leftover brats reheat well if you do so slowly in the microwave. 100% power will blow them up, so procede with caution and use appropriate settings for your microwave.

WISCONSIN BRATWURST
This is the only way to cook bratwurst in Wisconsin. The brats are incredibly tasty! If you can get fresh bratwurst from a sausage shop, do it... it is worth the extra cost. Serve with brown mustard on substantial hoagie rolls, never on hot dog buns. Mustard is important and must always be stone ground. Add warm sauerkraut and ketchup, if you like. Chow down! Think about those Wisconsin summers! Listen to some polka!

- Prick bratwurst with fork to prevent them from exploding as they cook. Place in a large stock pot with the onions, butter, and beer. Place pot over medium heat, and simmer for 15 to 20 minutes.
- Preheat grill for medium-high heat.
- Lightly oil grate. Cook bratwurst on preheated grill for 10 to 14 minutes, turning occasionally to brown evenly. Serve hot off the grill with onions on hoagie rolls.

SHEBOYGAN GRILLED BRATS
Growing up on a lake in the Sheboygan area, this was a standard way that the German folks would grill their brats. We always served them on the old-fashioned hard rolls. By finishing them in the beer sauce they just get better and better. Though it's expensive, on special occasions I use a dark beer which is not German at all: Guinness Irish Stout. Around our house, we eat them with ketchup and mustard, and the cooked onions from the brat sauce.

- Preheat an outdoor grill for high heat and lightly oil grate.
- Melt butter in a large skillet over medium heat, cook and stir the sliced onions for 5 to 10 minutes, or until tender and translucent. Add the chopped garlic and cook, stirring, for an additional 2 minutes. Add the beer and let simmer while the bratwursts are cooking on the grill.
- Grill the bratwursts for 30 to 35 minutes, turning often. Be careful not to poke holes in the casing. Remove the bratwursts from the grill and simmer in the beer sauce for an additional 10 to 15 minutes. Serve hot with onions on the rolls.

- In a deep skillet or Dutch oven, add the brats, 1 sliced onion, the beer, and 1/2 of a stick of butter cut into cubes. Make sure the beer is just covering the meat.
- Bring the beer mix to a slow boil, turn the heat to medium-low, and simmer the bratwurst for 10 minutes.
- Remove the bratwurst from the liquid and clean out the pan, making sure to scoop out the savory onions to serve alongside the bratwurst. Pan-fry them in a skillet with a little oil for 3 minutes on each side until brown. The internal temperature should be at least 160F to be properly cooked.
