BRATWURST IN BEER SAUCE - STOLZER HEINRICH (PROUD HENRY)

This is a traditional German dish which I have been cooking for almost 20 years. I found it in my mother's cookbook "Cuisines of Germany" and pretty much have it memorized now. Don't let the ingredients fool you - it all comes together well and is quite tasty. I serve it usually with a salad and turnip mashed potatoes.

Bratwurst in Beer Sauce - Stolzer Heinrich (Proud Henry) image

Steps:

  • Poke a few holes in each bratwurst with a fork so they don't burst.
  • Dredge the brats in flour.
  • Melt the butter in a skillet and fry the bratwursts on both sides.
  • Remove them from the skillet and set aside.
  • Pour the beer into the skillet and deglaze it, making sure you scrape all the yummy crumbs sticking to the sides and bottom.
  • Add the ginger cookie crumbs and grated onion.
  • Cook those together for about 10 minutes.
  • Season with salt, pepper, beef stock and lemon juice.
  • Cook for 2 more minutes.
  • Reduce heat, return the bratwurst to the skillet and cook them until heated through.

4 bratwursts
1 -2 tablespoon flour
1 -2 tablespoon butter
1 1/2 cups dark beer
3 -4 tablespoons ginger cookie crumbs (I use gingersnaps and crush them in a ziplock bag with the side of a hammer)
1 tablespoon grated onion
salt and black pepper (to taste)
3 tablespoons concentrated beef stock (when out, I've used Maggi's)
1 -2 tablespoon lemon juice

Steps:

  • Place brats in a Dutch oven with onions and butter, cover the brats with beer. Bring to a boil and reduce to simmer until brats are cooked. Remove brats and set aside beer mixture. Grill brats until golden brown and return to beer mixture until ready to serve. Serve brats on fresh baked brat buns with sauerkraut, onions, green peppers, ketchup, and/or mustard.

1 dozen brats
Beer, to cover
1 medium large sweet onion
2 ounces (1/2 stick) butter
Serving suggestions: fresh baked brat buns with sauerkraut, onions, green peppers, ketchup, and/or mustard

Steps:

  • Preheat an outdoor grill for medium-high heat. When hot, lightly oil grate.
  • Combine the beer and onions in a large pot; bring to a boil. Submerge the bratwurst in the beer; add the red pepper flakes, garlic powder, salt, and pepper. Reduce heat to medium and cook another 10 to 12 minutes. Remove the bratwurst from the beer mixture; reduce heat to low, and continue cooking the onions.
  • Cook the bratwurst on the preheated grill, turning once, 5 to 10 minutes. Serve with the beer mixture as a topping or side.

Steps:

  • In a saucepan, simmer bratwurst in beer and chicken broth for about 10 minutes; reserve both liquid and sausages, separately.
  • Meanwhile, in a large skillet, cook bacon over medium heat for 6 minutes; transfer bacon pieces to a plate.
  • Add onions to bacon drippings and cook until softened, about 5 minutes.
  • Add reserved liquid from bratwurst and cook, over medium high heat, until mostly evaporated, about 8 minutes.
  • Add the sauerkraut, carrots, bacon, and bratwurst, cover and heat through; stir in apples and serve.

  • Place a 10-12 inch skillet over medium-high heat stove. In about 2 minutes add the oil and brown the brats, about 1-2 minutes per side, or until they are nicely colored. Remove them from the skillet and set them aside temporarily.
  • Lower the heat to medium and melt the butter in the skillet. Add the onions, brown sugar, thyme, salt and pepper and paprika, stir and let cook down until onions are soft and just beginning to caramelize (about 6-8 minutes).
  • Pour the beer over the softened onions, stir, scrape any browned bits from the bottom of the skillet. Add the beef stock and stir. Add the brats back and make sure they are nicely submerged. Simmer until beer sauce has reduced and the brats are fully cooked (160 F). About 20-25 mins. If you used pre-cooked brats the temperature doesn't matter, just make sure the sauce has reduced.
