BRAZILIAN ORANGE RICE

This is a favorite with fish or chicken, an easy, mild rice with a unique flavor. You can use chopped Brazil nuts to be authentic, but since I really don't like them, I use pine nuts.

Brazilian Orange Rice image

Steps:

  • Combine water, basmati rice, salt, olive oil, chili powder, garlic powder, brown sugar and orange zest.
  • Bring to a boil, cover and simmer over low heat about 40 to 45 minutes, or until rice is tender and liquid is absorbed.
  • Stir in pine nuts and black olives and serve.
  • (It's nice to garnish with orange slices).

2 cups water
1 cup brown basmati rice
1/2 teaspoon salt
2 tablespoons olive oil
1 1/2 teaspoons chili powder
1/4 teaspoon garlic powder
1 teaspoon brown sugar
1 teaspoon orange zest (tangerine is good, also)
1/2 cup pine nuts (or chopped Brazil nuts if you like)
1/4 cup sliced black olives

BRAZILIAN YELLOW RICE

This dish is a staple that was brought to Brazil in the 1500s by Portuguese colonizers. Saffron was originally used to season and color the rice, but turmeric became more popular due to its greater abundance and lower price. This version is based on a college friend's recipe. Her family in Brazil usually served it alongside black beans stewed with similar ingredients to compliment the flavor and make a complete meal. For special occasions, they added chicken, peppers and peas, transforming the rice into a popular dish called galinhada.

Brazilian Yellow Rice image

Steps:

  • Add the oil to a medium saucepan and heat over medium-high heat until shimmering. Add the onions, turmeric, coriander, cumin, garlic powder and 1 teaspoon salt and reduce the heat to medium. Cook, stirring occasionally, until the onions are softened and the spices are toasted, 3 to 4 minutes.
  • Add the rice and stir until the grains are completely incorporated into the onion mixture. Add the broth and bring to a boil over medium-high heat. Reduce the heat to low, cover tightly and simmer for 15 minutes.
  • Remove the pot from the heat and let sit, covered, for 10 minutes more; the rice will continue to steam. Uncover the pot. All the broth should be absorbed and the onions will be on top. Fluff the rice with a fork before serving.

2 tablespoons olive oil
1 small onion, cut into small dice (about 1/2 cup)

Orange-Flavored Rice image

Steps:

  • Place a medium saucepan over medium heat. Add the olive oil and rice, and cook until the rice smells toasty, about 3 minutes. Add the chicken stock and half of the orange zest and juice. Bring to a boil, stir once more, then cover and reduce the heat to low. Simmer until tender and the liquid has been absorbed, 18 to 20 minutes. Remove from the heat and let stand, still covered, for 5 minutes. Stir the remaining orange zest and juice into the rice, and garnish with the green onions.

ORANGE RICE

This is a wonderful rice dish that can be served with Poultry as a side dish or used as a stuffing. I made this up about 30 years ago to make something extra when I was looking for a stuffing for Cornish Game Hens for a party. Over the years, I've settled on this recipe. Everyone loves it when I cook it, so I thought I would share.

Orange Rice image

Steps:

  • Melt butter in a pan over medium heat. Add rice to the butter and saute until the rice becomes golden brown. Stir frequently to avoid becoming over brown.
  • Add Orange Zest, dried fruit and stir for 2 minutes. This will allow the zest to give up it's oils.
  • Add Chicken broth, Orange Juice, salt, pepper and mandarin oranges to the rice mixture. Let mixture come to a boil, then turn heat down to low.
  • Allow mixture to cook uncovered until the liquid level reaches the top of the rice, then cover with a tight lid.
  • Rice is ready to be used as a stuffing at this point. Stuff poultry loosely, as the rice will continue to swell as it finishes cooking.
  • If dish is going to be used as a side dish, continue cooking for another 15 minutes, then turn off burner and allow to set until you are ready to serve.

Steps:

  • Wash the rice until the water runs clear and set aside to dry. Boil enough water for two cups. Chop the onions and garlic finely. Place a pan over medium heat and add the olive oil. Once olive oil is heated add the chopped onions and garlic.
  • Sauté until fragrant; approximately 3 minutes. Add the dry rice to the pan and stir for an additional 3-4 minutes making sure that the rice does not stick to the bottom of the pan. Add the two cups of boiling water to the rice and the salt.
  • Place a lid on the pan and cook on medium heat for 8 minutes. Decrease the heat to low and cook for another 10-15 minutes, or until the water has all evaporated. If the rice is not cooked yet, add a little bit more water!

Fresh Orange Rice image

Steps:

  • Remove the zest from the orange and measure out up to 2 tablespoons, if desired. Mince and set aside.
  • To garner the maximum amount of juice from your oranges, with a sharp knife pierce the oranges about 5-6 times and microwave for 30 seconds.
  • Juice the orange and measure out 3/4 cup; more or less according to your preference. You may need to juice another orange if two oranges don't yield enough juice. Remember that for 2 cups of rice you will need 4 cups of liquid (water/orange juice) in whatever ratio you choose.
  • Place the rice in a pan along with the water, salt and orange juice. NOTE: *Important to stir in the orange zest at the end of the cooking time. DO NOT add the zest in with the rice while it is cooking or the rice will turn bitter.
  • Cover pan, bring to a boil, reduce heat and simmer about 20-25 minutes or until liquid is absorbed.
  • Remove pan from stove; fluff rice with a fork and stir in the zest. Let stand covered for a few minutes then serve.
  • Garnish with orange slices if desired.

Steps:

  • Sprinkle chicken lightly with salt and generously with ground black pepper. Heat oil in heavy large skillet over medium-high heat. Add chicken, garlic, and peel; sauté until chicken is lightly browned, about 3 minutes. Add 1 cup water and orange juice and bring to boil. Mix in rice, seasoning packet, and olives. Return to boil.
