HERBED BRIE IN PUFF PASTRY
This is a great appetizer! Serve with water crackers.

Steps:
- Preheat an oven to 350 degrees F (175 degrees C).
- Mix together parsley, garlic, rosemary, thyme, marjoram, and salami. Slice the Brie in half crosswise, so you have two wheels. Spread the salami and herb mixture on one of the cut sides and top with the other half of the Brie wheel. Place the Brie in the center of the sheet of puff pastry. Fold the puff pastry up and over the Brie, pressing to secure the pastry together using a little bit of water if necessary. Brush the pastry with beaten egg.
- Bake the pastry in the preheated oven until golden brown, about 30 minutes. Remove from the oven and let stand for 15 minutes before serving.

BRIE AND HERB CHEESES IN PASTRY
Steps:
- Lightly flour bakinng sheet. Place puff pastry on prepared sheet and roll out gently to remove fold lines. Place Brie in center of pastry. Spread 1 package semi soft cheese on Brie. Turn Brie over. Spread remaining semisoft cheese on second side of Brie. Bring pastry up around sides and over cheese wrapping completely and trimming excess pastry. Turn over and place seam side down, Gather pastry scraps, reroll and cut out decorations to place on top of pastry. Combine egg and water brush over top. Preheat oven to 375 degree oven. Bake pastry until golden brown 30 to 35 minutes. Let stand 10 minutes. Serve warm

- Roll puff pastry into a 14-in. square. Spread jam into a 4-1/2-in. circle in center of pastry; place cheese over jam. Fold pastry around cheese; trim excess dough. Pinch edges to seal. Place seam side down on ungreased baking sheet. Beat egg and water; brush over pastry., Cut the trimmed pastry pieces into decorative shapes and place on top; brush with egg mixture if desired. Bake at 400° for 20-25 minutes or until puffed and golden brown. Serve warm with apple slices.

BRIE WITH STRAWBERRIES AND HERBS IN PUFFED PASTRY
Brie cheese encased in a delicate puff pastry and baked until melted is one of the world's easiest yet tastiest appetizers! In this recipe the brie is topped with fresh strawberries and jam with fresh herbs, surrounded in pastry, and drizzled with Grand Marnier. Wonderful! Enjoy with slices of crusty baguette or crackers and a nice bottle of wine or champagne!

Steps:
- Preheat oven to 400°F.
- In a small bowl, combine jam, strawberries, and chopped rosemary.
- On a work surface, roll out puff pastry slightly into a 12-inch square.
- Put cheese (do not cut off rind) in center of puff pastry.
- Spread jam mixture over top of Brie.
- Fold puff pastry over Brie; wet edges and press to seal.
- Brush pastry with beaten egg.
- Transfer to a baking sheet and bake for 20 minutes.
- Cool for 10 minutes.
- Carefully transfer to a cheese board or platter and drizzle with Grand Marnier. Garnish with rosemary sprigs and grape clusters around the edges.
- Serve warm, with crusty baguette slices or crackers and a nice bottle of wine or champagne!

- Place a large skillet over medium-high heat, and drizzle in about 2-3 tablespoons of oil; once hot, add in the sliced onions along with a pinch of salt and pepper, and cook the onions, stirring occasionally, until they become deeply golden-brown and caramelized, about 20 minutes.
- Once golden, stir in the teaspoon of sugar, followed by the balsamic vinegar, and allow the mixture to bubble up and reduce, stirring to incorporate; allow the onions to cook for another 3-5 minutes, stirring frequently now, until jam-like and deeply browned; then, add the 1 teaspoon of thyme leaves, stir to combine, and remove from pan and allow to cool (you should have roughly 1/2 cup).
- To prepare the baked brie, lightly flour your work surface, and roll out the thawed puff pastry sheet to about 1/8” thickness, a bit larger than the wheel of brie (trim the puff pastry a little bit if it's considerably too large for your brie); place the brie in the center of it, spoon over top of it the cooled, balsamic caramelized onions, then fold the puff pastry sheet over top to cover everything, creating a little “package” with pleats.
- Place the wrapped brie “package” onto a small baking sheet lined with parchment paper, and very gently brush some egg wash over the puff pastry (avoid allowing it to pool underneath), and place into the fridge to chill for 30 minutes (or even overnight), covering lightly with plastic wrap.

- Preheat oven to 350°. Cut off top rind of brie with a sharp knife (it’s okay if you can’t get the rind off in one piece; brie will smooth out as it bakes).
- Toss rosemary, thyme, and oil on a parchment-lined rimmed baking sheet until coated. Spread herbs evenly on parchment. Place brie in the center so that it covers about half of the herbs. Bake until cheese is melted, 15–20 minutes. Remove from oven and let rest to firm up slightly, about 5 minutes (if you skip this step, you risk spilling molten cheese all over your cutting board).
- Strip leaves from uncovered herbs and sprinkle over brie. Using parchment and a wide spatula, carefully slide brie and covered herbs onto a cutting board.
