BRIE CHEESE, GRAPE AND PEPPERONI PUFF APPY

Found in THE BEST OF COOKING by Arne Kruger & Annette Wolter, this recipe is a great appy to fix for a crowd. Even using puff pastry (which I find challenging), these are a snap to fix, can be prepared ahead, can be served warm or at room temp *AND* they are pretty to look at + yummy to eat! *Enjoy* (Edited to Add: Pls see Prep Notes added after these were made & after 1st review)

Brie Cheese, Grape and Pepperoni Puff Appy image

Steps:

  • Preheat oven to 400°F (180°C).
  • Defrost puff pastry. Roll out on a floured surface to a 1/8-in thick rectangle & cut into 2-in squares.
  • Whisk eggs w/water, paprika + pepper & use a pastry brush to brush the surface of the squares.
  • Place 1 slice of pepperoni, a sml cube of cheese & 1/2 grape in the center of ea pastry square. Bring the corners inward to form envelopes & secure each w/1 of the soaked wooden toothpicks.
  • Brush the surface of the envelopes w/the rest of the egg mixture, place on a greased baking tray & bake for 15 min or till lightly browned.
  • Allow to cool slightly, remove toothpicks & serve warm or allow to cool to room temp & serve.
  • NOTE #1 - There was some leakage of cheese w/my trial batch, but it mostly disappeared in the 2nd batch by inserting the toothpick till it "grabs" the grape, not all the way thru the puffs. The toothpicks work great here to allow for consistently shaped puffs & easy handling! :-).
  • NOTE #2 (Added after 1st review) I made 1 chg to the orig recipe & now believe it was an error on my part as it left out a main source of flavor. I have corrected for that by adding back the pepperoni slices now in the ingredients & prep.

1 lb frozen puff pastry
2 eggs
2 tablespoons water
1/2 teaspoon paprika
1/4 teaspoon black pepper
8 ounces brie cheese (trimmed of rind & cut into sml cubes)
18 -20 seedless grapes (halved lengthwise & may use green, red or a mix of grapes)
36 -40 pepperoni slices (smallest size & thinly sliced)
36 -40 wooden toothpicks (soaked in water for 30 min)

BAKED BRIE IN PUFF PASTRY

This wonderful, light puff pastry is filled with melted Brie cheese. Serve with crackers on the side.

Baked Brie in Puff Pastry image

Steps:

  • Preheat oven to 350 degrees F (175 degree C). Lightly grease a 9 inch pie pan.
  • Slice the wheel of Brie in half, horizontally, so that the halves are two, flatter wheels of Brie. Lay the puff pastry in the pie pan. Place half of the Brie (rind-side down) onto the pastry dough. Sprinkle almonds evenly over the top. Place the other half of the Brie (rind-side up) over the almonds. Bundle the pastry dough around the Brie.
  • Bake for 15 to 20 minutes. Let cool for 5 minutes before serving.

Steps:

  • Preheat oven to 400°. Cut Brie horizontally in half. Sprinkle bottom half with blue cheese; replace top., On a lightly floured surface, roll pastry into a 14-in. square. Trim corners to make a circle. Spoon jam onto center of pastry; sprinkle with almonds. Top with Brie., Lightly brush edges of pastry with beaten egg. Fold pastry over cheese, pinching edges to seal; trim excess pastry as desired., Transfer to an ungreased baking sheet, seam side down. Brush pastry with beaten egg. Bake until golden brown, 20-25 minutes., Immediately remove from pan to a serving plate; let stand 45 minutes before serving. Serve with crackers.

Steps:

  • Preheat the oven to 400 degrees F.
  • Melt the butter in a large skillet over medium-high heat. Add the onions, season with salt and pepper, to taste, and saute until just brown, about 10 minutes. Add 1/2 cup of water and cook stirring often, until dark golden brown, about 15 minutes. Let the mixture cool to room temperature.
  • Roll each sheet of pastry to a 12-inch square on a marble surface or parchment paper to prevent sticking. Divide the caramelized onions in the center of each pastry. Put a brie round on top of the onions and brush edges of both pastry squares with beaten egg. Fold pastry up and over cheese to completely enclose the cheese in the pastry. Press the seams together to completely seal. Arrange each pastry round, seam side down, on a silicone mat or parchment lined baking sheet. Brush the top of each pastry round with beaten egg. Bake until golden brown. 20 to 25 minutes. Let stand 15 to 20 minutes before indulging. Enjoy!

Grilled Brie with Grapes and Pistachios image

Steps:

  • Place a piece of aluminum foil under the rack of your grill and preheat it to medium-high.
  • Drizzle the oil over the grapes and season with salt and pepper. Place the grapes and the brie onto the grill and cook, turning both occasionally, until the grapes are lightly charred and bursting, about 4 to 6 minutes.
  • Remove the grapes from the heat, transfer to the serving platter and drizzle with balsamic. Continue to cook the brie for 2 to 3 minutes, or until grill marks appear and it is soft but you are still able to lift it. Add to the platter.
  • Scatter the pistachios over the brie and grapes and garnish with a few basil leaves. Serve immediately with sliced baguette and crackers.

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a cookie sheet.
  • Slice one wheel of Brie cheese in half so you have 2 circles of cheese. Spread apricot or peach preserves on (the cut side) half of one circle of brie. Make sandwich out of the two halves of Brie, so that the preserves are in the center of both halves.
