Penne a La Vodka With Broccoli image

Steps:

  • Bring large pot of lightly salted water to a boil. Add pasta and cook following package directions.
  • Add broccoli florets during last 4 minutes of cooking.
  • Drain and reserve.
  • While pasta is cooking, heat olive oil in a large nonstick skillet over medium-low heat.
  • Add onion and cook 5 minutes, stirring occasionally.
  • Add Canadian bacon and vodka and cook 2 minutes.
  • Add whole tomatoes with liquid, tomato paste, salt and red-pepper flakes.
  • Simmer, covered, 10 minutes.
  • Stir in half-and-half, 1/4 cup of the cheese and half of the basil.
  • To serve, toss penne and broccoli with sauce and top with remaining cheese and basil.

2 tablespoons tomato paste
1/2 teaspoon salt
1/2 teaspoon red pepper flakes
1/2 cup fat-free half-and-half
1/2 cup grated parmesan cheese
1/2 cup basil leaves, torn

  • Preheat oven to 350 degrees.
  • Melt together the cream cheese, blue cheese, butter, salt and flour.
  • Add milk and bring to a boil.
  • Add broccoli and mix well.
  • Transfer to a 1 quart greased casserole and top with bread crumbs.

Steps:

  • Cook and drain the broccoli.
  • Place broccoli in a buttered, 2 quart casserole baking dish.
  • Over low - medium heat, melt 1/4 cup of margarine or butter and Velveeta, until smooth and pour on top of the broccoli.
  • Crush 1 tube of Ritz crackers and mix all ingredients together, in the casserole dish.
  • Melt rest of margarine or butter and pour over the top and bake in a pre-heated 350 degree oven for 10-15 minutes .

Steps:

  • Blanch broccoli florets in boiling water for 4 minutes and drain well.
  • In a cup combine lemon juice and butter. Mix well. Set aside.
  • In greased baking dish lay broccoli down on the bottom of dish. Next sprinkle parmesan on top of broccoli. Next sprinkle almonds on the top of the casserole.
  • Dot the whole top of the casserole with the butter/lemon juice mixture. Add salt and pepper to taste.
  • Bake, in preheated 325°F oven, for 15-20 minutes.
