POTATO AND CARAMELIZED ONION TART

Steps:
- Preheat the oven to 375 degrees F.
- Prepare the pie crust according to package instructions. Flatten into a disk and chill in the refrigerator while preparing the filling.
- In a large saute pan over medium heat, heat the canola oil. Add the onions and season with salt and pepper. Cook, stirring occasionally, until the onions are dark golden brown, 10 to 15 minutes. Remove from the heat.
- In the meantime, using the slicing blade attachment of a food processor, or with a box grater, slice half the potato into 1/8-inch-thick slices. Place in cold water to avoid browning. (Reserve the remaining half of potato for another use, such as Round 2 Recipe Open Faced Roast Pork and Onion Sandwich.)
- In a small bowl, stir together the cream cheese, Italian seasoning, mustard and season with salt and pepper.
- Remove the pie crust from the fridge and roll into a 12-inch round about 1/4-inch thick. Place on a parchment-lined baking sheet. Spread the cream cheese mixture in an even layer over the pie crust, making sure to leave a 1-inch border around the edge.
- Dry the potatoes thoroughly and place an even layer on top of the cream cheese, overlapping slightly to fit and keeping 1/2-inch from the edge of the cream cheese. Over the top of the potatoes place an even layer of caramelized onions. (Reserve 1/2 cup of the onions for another use, such as Round 2 Recipe Open Faced Roast Pork and Onion Sandwich.) Fold over the edges of the crust to create a 1-inch-wide border around the tart filling.
- Bake until the crust is golden and the potatoes are cooked through, 30 to 35 minutes. Allow to cool for 5 minutes before slicing.
FRENCH ONION AND BLUE CHEESE TART
In this festive tart from Nadiya Hussain, onions are the star: in pride of place on a layer of puff pastry and crumbled blue cheese. Serve as an appetizer.

- Start by cooking the onions. They need to be cooked slowly on low heat, so it's best to begin with those.
- Melt the butter in a large nonstick frying pan-we have a load of onions to cook. When the butter has melted, pick off the thyme leaves and add, then add the garlic and onions. Mix everything together.
- Now add the pepper, salt, and sugar and mix. Cook on medium heat for 30 minutes, stirring occasionally, until you have onions that look like the kind you would only eat with a burger in a Sunday market at 6 a.m.!
- While that cooks, start on the pastry. Preheat the oven to 400°F. Line a baking sheet with some parchment paper or use the paper the pastry comes in and roll out the pastry onto the sheet.
- Using a knife, score a smaller rectangle ½ inch/1cm inside the pastry rectangle, making sure not to cut all the way through. Pierce the inner rectangle with a fork all over to allow the steam to escape when it bakes.
- Brush the edges with the egg and bake for 20 minutes, until golden all over.
- Take out and, using the back of a spoon, push down all the puffed-up pastry of the inner rectangle, creating a nice neat border.
- Take the blue cheese and crumble all over the inner rectangle of the pastry. Add the onions and scatter them all over till you have an even layer. Now bake for 15 minutes.
- Take out and let cool for 10 minutes before eating, sprinkled with the chives.
BROCCOLI, POTATO, ONION AND BLUE CHEESE TART
Steps:
- 1. Grease a tart dish and line wth the pastry sheet. Cook the pastry until just brown, and put aside. 2. Slice the onions and potatoes and fry in the butter until potatoes start to soften. 3. Chop broccoli to bite size peieces and add to the onions/potatoes. Stir through until broccoli softens (just a few minutes). Season with salt/pepper. Leave for 10 minutes to cool. 4. In a jug, mix the eggs and cream together. 5. Fill the pastry to the top with the vegetables and level out. Top up with the egg/cream mixture. Crumble the cheese evenly over the top, and sprinkle with the chopped herbs. Season with salt and pepper. 6. Cook for 20-30 minnutes until starts to turn golden. Serve either hot or cold! 5.
GOAT'S CHEESE, POTATO & ONION TART

- Heat oven to 190C/fan 170C/gas 5. Roll out the pastry so it is large enough to fit a deep 23cm loose-bottomed tart tin, then line the tin with the pastry. Chill for 30 mins. Line the pastry with greaseproof paper, fill with baking beans and bake for 15 mins. Remove the paper and beans and return the tin to the oven for 5 mins until golden, then remove and set aside. Reduce oven to 180C/fan 160C/gas 4.
- Heat the butter and oil in a large frying pan, add the onions and potato and cook over a very gentle heat for 10-15 mins, turning occasionally, until golden and tender. Season if you want to, then add the garlic and thyme leaves, and cook for a further 3 mins. Tip into the pastry case along with the goat's cheese and spread out evenly.
- Whisk the eggs and crème fraîche together, season if you want to, then pour into the pastry case and bake for 30-35 mins until lightly golden brown and just set in the centre. Serve warm, with rocket leaves scattered over if using.

- Set oven to 350°F.
- Grease an 8-inch square pan (or any size pan that will hold the mixture).
- In a saucepan over medium-low heat, melt the 2 Tbsp butter; whisk in flour, salt, pepper and nutmeg; whisk and cook for 1 minute, add in the half and half cream; whisk until thickened and bubbly.
- Add in the Parmesan cheese (if using), cream cheese and the cheddar Or Swiss cheese; stir until the cheese are completely melted.
- Stir in the hash brown potatoes; mix until combined.
- Spoon HALF of the mixture into a prepared baking dish; top with the broccoli, spoon the remaining mixture over the broccoli.
- Cover and bake for 25-30 minutes.
- In the meantime, in a small bowl, combine the bread crumbs with the Parmesan cheese, mix to combine; add in melted butter, mix well.
- Remove the casserole from the oven.
- Sprinkle the breadcrumb mixture just around the edges of the casserole; bake 10 minutes longer.
- Remove from oven; let sit for 10 minutes before serving.
- Note: do not overcook the broccoli, as it will become too soft when baked in the casserole.

- Heat oven to 200C/180C fan/gas 6. Microwave the potatoes on High for 12-15 mins until tender. Meanwhile, steam or boil the broccoli for 3 mins, then drain well. When the potatoes have cooled a little, cut them in half lengthways and scoop the insides into a bowl.

- Preheat oven to 425 degrees. Bake pie shell for 5 minutes, then remove from oven and set aside. Reduce heat to 375 degrees.
- Microwave broccoli in a microwave-safe bowl for about 3 minutes at full power, or until thawed. Drain well in colander.
- Sprinkle 1 cup of swiss chees over pie shell. Top with broccoli and onion.
- In a small bowl, beat eggs until blended. Stir in milk, salt, and pepper, and pour over broccoli. Sprinkle on remaining cheese.
- Bake for 25 minutes, or until tart is golden brown and puffy.
- Let stand for about 10 minutes before serving warm.
