GRILLED MARINATED SWORDFISH STEAKS
Swordfish, with its firm, lean flesh, is an ideal candidate for grilling. It's not as forgiving as some fatty fish, like tuna and black sea bass, so proceed with caution. If you remove the fish from the fire when the center is still slightly pink, by the time it gets to the table it should be cooked through. A quick marinade of soy sauce, red wine vinegar, rosemary, garlic, coriander and cumin pairs beautifully with the meatiness of the fish, but do not marinate for more than 10 to 15 minutes, or the acid will break down the flesh and leave it mushy (or the flavor will overpower the fish). If you don't have a grill, this works equally well in a broiler. Serve this alongside a colorful pile of Pierre Franey's green bean and tomato salad. It's a summer meal you'll never forget. - Preheat a charcoal grill or broiler, or heat a grill pan.
- Sprinkle fish with salt and pepper on both sides. Place oil in a flat dish, and add soy sauce, vinegar, rosemary, garlic, coriander, cumin, lemon rind and pepper flakes. Blend well. Place fish steaks in marinade, coat well on both sides, cover with plastic wrap and let stand for 10 to 15 minutes.
- If the swordfish is to be cooked on a grill (or grill pan), place fish on grill and cook for 3 to 4 minutes. Turn and cook for 3 minutes more. Cook longer if desired. If it is to be cooked under a broiler, place fish on a rack and cook for 3 to 4 minutes on each side. Serve with a string bean salad.

BROILED SWORDFISH STEAK WITH ROSEMARY

- Wipe the swordfish dry with paper towels. Combine two tablespoons olive oil with the lemon juice, thyme, salt and pepper. Brush the mixture on the swordfish and marinate for one hour.
- Preheat broiler to high.
- Meanwhile, soften the shallots in the remaining tablespoon olive oil over low heat and add the tomatoes and rosemary. Cook for three to four minutes, stirring occasionally. Set aside.
- Broil the swordfish for five to seven minutes, turn and broil for about three minutes longer. Place on a serving dish or individual warm plates and place the tomato-rosemary mixture on the side. Serve immediately.

BROILED CARIBBEAN SWORDFISH

- 1. Place fish in ungreased square baking dish, 8 X 8 X 2 inches. Mix lime peel, lime juice, grapefruit juice, salt and garlic pour over fish. Cover and refrigerate 2 hours. Make Papaya Salsa. 2. Set oven control to broil. Spray broiler-pan rack with cooking spray. Remove fish from marinade reserve marinade. Place fish on rack in broiler pan. Broil with tops about 4 inches from heat about 16 minutes, turning and brushing with marinade after 8 minutes, until fish flakes easily with fork. Discard any remaining marinade. HERBY BROILED SWORDFISH WITH ROASTED CHERRY TOMATOES
For this delectable seafood dinner, Martha puts fresh swordfish steaks in a citrusy, herby marinade before cooking them under the broiler. For an extra lovely presentation, use cherry tomatoes on the vine.

- Preheat oven to 425°F, with a rack 6 inches from heating element. Stir together herbs, 1/4 cup oil, and lemon zest and juice; season with salt and pepper.
- Toss tomatoes with remaining 2 tablespoons oil; season with salt and pepper. Arrange tomatoes in a shallow nonreactive baking dish and roast, stirring once halfway through and breaking up some with back of spoon, until burst and beginning to collapse, 15 to 20 minutes. Stir in garlic and red-pepper flakes; roast 5 minutes more. Remove from oven and cover; switch oven to broil.
- Meanwhile, season swordfish with salt and pepper and rub half of herb oil over both sides. Let stand 15 minutes. Arrange fish on a broiler-safe pan and broil, flipping halfway through, until cooked through and browned in places, 6 to 8 minutes total. Transfer to dish with tomatoes, slice, and serve, drizzled with remaining herb oil.

- Rinse the fish in cold water and pat dry with paper towels.
- Brush both sides with marinade and lay on a plate (or on a broiler rack or baking sheet if broiling); set aside.
- Preheat a charcoal grill or broiler.
- Add enough chicken broth to the reserved pineapple juice to measure 2 cups.
- Stir the broth mixture, pineapple, rice, bell pepper and allspice together in a medium saucepan and bring to a boil over high heat.
- Cover, reduce the heat to low and simmer until the liquid is absorbed, 18 to 20 minutes.
- Take from the heat and let stand until ready to serve; discard the allspice berries.
- When the rice has cooked 12 to 15 minutes, place fish on a lightly oiled grill and cook 3 minutes.
- Turn over and cook until the fish is just barely opaque but still moist in the center, 2 to 3 minutes more for 3/4-inch-thicksteaks (or broil, without turning, for 6 to 8 minutes).
- Fluff the rice with a fork, stir in the green onions and spoon onto individual plates.
- Transfer the swordfish to plates and garnish with lime wedges.

- Crush and chop the garlic. In a small bowl whisk together the melted butter, olive oil, garlic, zest of half the lemon and the juice.
- Strip the rosemary sprigs and discard the stems. Finely dice the fresh rosemary, it should come to about 1 tablespoon or more. Add to the butter mixture and pour over the swordfish in a plastic zip bag or container to marinate for 20 minutes or up to an hour tops (See Note 1).
