Brussels Sprouts with Bacon image

Steps:

  • Brown bacon in a medium skillet over medium high heat. Remove bacon to a paper towel lined plate. Add extra-virgin olive oil to the pan, 1 turn. Add shallots to the pan and saute 1 to 2 minutes. Add Brussels sprouts and coat in oil. Season with salt and pepper. Cook Brussels sprouts 2 to 3 minutes to begin to soften, then add broth. Bring broth to a bubble, cover and reduce heat to medium low. Cook 10 minutes, until tender. Transfer sprouts to a serving dish with a slotted spoon and top with cooked bacon bits.

1 shallot, chopped
1 1/2 pounds Brussels sprouts, trimmed, small sprouts left whole, larger sprouts halved
Salt and pepper, to your taste

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Grease a baking sheet.
  • Mix Brussels sprouts, bacon, onion, olive oil, garlic powder, cayenne, and salt together in a large bowl. Spread evenly on the prepared baking sheet.
  • Roast in the preheated oven until bacon is crispy and reaches 145 degrees F (63 degrees C), about 40 minutes, stirring after 20 minutes.
  • Remove from the oven. Toss with pine nuts and serve.

This is a simple yet delicious recipe that takes little time to put together. It's a tasty way to incorporate a healthy, and often snubbed, vegetable into one's diet. I've been cooking Brussels sprouts this way for years. I'm not sure where I got the recipe. Using fresh Brussels sprouts is preferred naturally, but if not readily available, frozen Brussels sprouts may be used instead. If using frozen Brussels sprouts, you may have to drain any excess liquid that is rendered while cooking the sprouts.

Sauteed Brussels Sprouts with Bacon and Onions image

Steps:

  • Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain the bacon slices on paper towels, retaining grease in the skillet. Crumble bacon.
  • Cook and stir onion in the bacon grease over medium heat until translucent, about 5 minutes. Add Brussels sprouts; cook and stir until Brussels sprouts are lightly browned, about 5 minutes. Season Brussels sprouts mixture with salt and pepper.
  • Sprinkle bacon over Brussels mixture and stir. Remove skillet from heat, transfer Brussels sprouts mixture to a serving bowl, and sprinkle with Parmesan cheese.

  • Cook the bacon- To a 12 inch frying pan, lay out 5 slices of bacon so that they don't overlap. Cook on medium heat until bacon is cooked through (5-10 minutes), using tongs to turn over as needed. Transfer the bacon to a paper towel-lined plate to drain. When cool enough to handle, chop the bacon into small pieces.
  • Wipe the pan- if your bacon let off a lot of grease, use a paper towel to carefully soak up the excess in a pan. You want a thin coating to help cook the brussels sprouts.
  • Cook the brussels sprouts- Add the brussels sprouts to the pan and cover with a lid. Every 3 minutes, lift the lid, stir up the sprouts, and replace the lid. If the pan is too dry, add 1/4 cup as needed (1-2 times during the cooking process). Cook for a total of 10-15 minutes, until a fork inserts into the brussels sprouts easily.
  • Add butter, salt and bacon- When brussels sprouts are cooked through, remove the lid, and make a space in the middle of the pan. Add the butter to the space and allow to melt. Add the bacon, sprinkle with salt, and toss everything up. Serve immediately.
