BIG BOB GIBSON'S ALABAMA WHITE BBQ SAUCE

Big Bob Gibson's Alabama White BBQ Sauce image

Steps:

  • Place all ingredients in a very large blender or food processor. (It may be necessary to do this in 2 batches; just add 1/2 of each ingredient and then repeat.) Blend for 1 minute, or until thoroughly combined and mixture is smooth. Pour sauce into a large bowl.
  • Use when grilling chicken; brush lightly over the chicken during the last few minutes of grilling. This sauce is also great for dipping; set some sauce aside for passing at the table.

1 quart mayonnaise
3/4 quart apple cider vinegar
1/2 cup corn syrup
1/4 tablespoon cayenne pepper
Prepared horseradish
Lemon juice
Salt and freshly ground black pepper

Steps:

  • Place all ingredients in a 2 quart saucepan.
  • Stir well to combine.
  • Bring to a low boil, stirring often.
  • Lower heat to simmer and cook for 40 minutes, stirring often, until thick.

1 medium red onion, fine dice
2 ounces Bourbon
2 tablespoons white vinegar
2 tablespoons liquid smoke (or more to taste)
1 tablespoon Worcestershire sauce
2 teaspoons prepared mustard
1 1/2 teaspoons Tabasco sauce
1 (29 ounce) can no-sugar-added tomato sauce
1 (6 ounce) can no-sugar-added tomato paste
1/4 cup Splenda granular
1/4 cup Splenda brown sugar blend
1 small garlic clove, minced (1 tea.jarred)
1/4 teaspoon garlic powder
1 tablespoon kosher salt
1 teaspoon fresh ground black pepper
1 teaspoon onion powder
1/8 teaspoon ground cloves
1/8 teaspoon celery seed
1 teaspoon lemon juice

From the Veganomicon. Excellent for BBQ Seitan Steaks in the summertime. This takes awhile to simmer, but it makes a lot, so it can be made early in the season then kept in the freezer for later use.

Backyard BBQ Sauce image

Steps:

  • Preheat a saucepan over medium heat. Place the onions in the pan and saute in oil until browned (about 7 min). Add the garlic and saute for another minute. Add all the other ingredients except the mustard and liquid smoke, and cook for at least 30 minutes and up to 1 hour, uncovered, stirring occasionally.
  • Lower the heat if the sauce begins to splatter everywhere. Add the mustard and liquid smoke and taste for sweetness/sourness. Adjust the flavors if you think it's necessary, and cook for 5 more minutes. If you like a smooth BBQ sauce then puree it, but thats not entirely necessary.

DREAMLAND BBQ SAUCE (DREAMGODDESS'S COPYCAT VERSION)

Dreamland BBQ...one of THE best rib joints in the state of Alabama. They make ribs so delicious, it'll make you wanna cry! It's worth every minute of the two hour drive from my house just to eat their ribs, not to mention the plate of Sunbeam bread and bowl of barbecue sauce (for dipping the bread in, of course!) that's brought to the table when you first arrive. I found a copycat recipe (which was an excellent recipe, by the way)for their famous sauce on another website, but I thought it needed just a bit of tweaking. I think Dreamland's sauce has more of a vinegar taste to it and it is definitely hotter than the copycat recipe. This is my version of the copycat recipe that I've tweaked a bit to taste more (in my humble opinion) like Dreamland's original sauce. This recipe makes a very thin bbq sauce.

Dreamland BBQ Sauce (Dreamgoddess's Copycat Version) image

Steps:

  • Combine the tomato and mustard in a dutch oven.
  • Stir together until well mixed.
  • Add remaining ingredients.
  • Bring to a boil, reduce heat and simmer for 30 minutes.
  • Serve warm with smoked or grilled ribs.
  • You can also do as we do at Dreamland, take a piece of plain white bread and dunk it in the sauce.
  • Absolute heaven in a bowl!
