If I ask our two girls (ages 7 and 14) what to fix for a special meal, this dish is always requested. - In a large bowl, cream butter and sugar until fluffy. Beat in the eggs, milk and vanilla. Stir in squash (mixture will be thin). , Pour into a greased 11-in. x 7-in. baking pan. Bake, uncovered, at 350° for 45 minutes or until almost set. , In a small bowl, combine topping ingredients; sprinkle over casserole. Return to the oven for 5-10 minutes or until bubbly. Freeze option: Bake casserole as directed without adding topping. Cool; cover and freeze. Freeze topping mixture in a resealable plastic freezer bag. To use, partially thaw casserole and topping in refrigerator overnight. Remove from refrigerator 30 minutes before baking. Preheat oven to 350°. Sprinkle topping over casserole and bake until bubbly.

- Preheat oven to 350°. Mix seasoning ingredients. Halve squash lengthwise; remove and discard seeds. Place squash in an 11x7-in. baking dish coated with cooking spray. This recipe is in great demand from my friends and family. It tastes similar to sweet potato souffle, with a custard-like texture. Use with any meal that sweet potatoes seem to go with (for example, ham, pork, etc). Yum yum!

- Preheat oven to 425 degrees F (220 degrees C).
- Put butternut squash in the microwave and cook on high, until soft, 2 to 3 minutes. Cut in half, scoop out seeds and cube. Bring a large pot of water to a boil. Add squash and cook until tender, about 15 minutes. Drain and mash.
- In a 9x13 inch casserole dish combine 3 cups mashed butternut squash, white sugar, milk, vanilla extract, salt, flour, eggs and 1/4 cup melted margarine.
- Bake in preheated oven for 45 minutes, or until set.
- In a medium bowl, combine crushed vanilla wafers, 1/2 cup melted margarine and brown sugar. Crumble over top of cooked casserole and return to oven to brown.

- Bake the squash until a fork can easily be inserted.
- Scoop out squash flesh and discard seeds.
- Mash squash flesh and measure out 2 cups.
- The squash flesh will be rather runny.
- In another bowl cream butter and sugar and add the 2 eggs, 5 oz evaporated milk, and vanilla.
- Add the 2 cups of squash.

- Cut the peeled, desseded squash into 2" pieces.

BUTTERNUT SQUASH BAKE
Before I knew the difference between a butternut squash and spaghetti squash, I bought the former by accident and discovered the taste was much better than spaghetti squash in this recipe. There are other spaghetti squash recipes posted but IMHO this is simpler, lighter and fresher tasting. There is less clean-up involved too. I think the original recipe was based off one I found in The New Basics cookbook.

- Preheat oven to 400 degrees.
- Cut squash in half, scoop out seeds, peel and cut into 1-inch cubes. (Received a suggestion from a more experienced chef here on 'zaar, peeling will be easier if squash is cut into smaller chunks first.).
- Toss with garlic and olive oil and pour mixture into 2 quart baking dish.
- Bake, uncovered, for 30 minutes, stirring twice. Meanwhile, chop tomatoes.
- Remove baking dish from oven, add salt and pepper and mash the squash up a bit with the back of a spoon. In the following order, top with tomatoes, mozzarella cheese, parmesan and scallions.
- Return to oven and bake, uncovered, for 30 more minutes or until hot and bubbly and cheese has melted.
