BUTTERNUT SQUASH BREAD

- In a large bowl, dissolve yeast in warm water. Add squash, milk, eggs, butter, sugar and salt; mix well. Gradually add 3-1/2 cups flour; beat until smooth. Add enough remaining flour to form a soft dough. , Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1 hour. , Punch dough down. Shape into three loaves; place in greased 8x4-in. loaf pans. Cover and let rise until doubled, about 30 minutes. , Bake at 375° for 25-30 minutes or until tops are golden. Remove from pans to cool on wire racks.

- Preheat oven to 350 degrees F (175 degrees C). Grease two 9x5-inch loaf pans.
- Beat sugar and shortening together in a bowl until fluffy. Stir butternut squash, eggs, and water into sugar mixture.
- Mix flour, baking soda, baking powder, salt, cinnamon, and cloves in another bowl; stir into sugar mixture. Add nuts and raisins; stir until batter is just blended. Pour batter into prepared loaf pans.
- Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 1 hour. Cool in the pans for 15 minutes before removing to cool completely on a wire rack.

- Preheat oven to 375°. Place squash in a greased 15x10x1-in. baking pan. Drizzle with oil; toss to coat. Roast 25-30 minutes or until tender. Reduce oven setting to 325°., Transfer squash to a bowl; mash coarsely. In a large bowl, beat butter and sugars until blended. Add eggs, 1 at a time, beating well after each addition. Beat in mashed squash and vanilla. In another bowl, whisk flour, baking soda, cinnamon and salt; add to butter mixture alternately with yogurt, beating well after each addition., Transfer to a greased 9x5-in. loaf pan; sprinkle with sea salt. - 1. *To cook the Butternut Squash, cut into four sections and remove all the seeds. Place skin side up in a baking pan and add about 1/2-1 inch of water. Bake at 350 degrees for about 40 minutes or until the fork pierces easily. Pour out excess water, allow to cool and remove the skin. Approximately 1/2 the squash equals 1 and 1/4 cups need for the recipe.
- 2. Preheat the oven to 350 degrees. In a bowl, sift together the first 3 ingredients.
- 3. In the food processor, process the cooked squash until smooth. Then add the next five ingredients and process until combined.
- 4. Add the wet ingredients to the dry ingredients and mix well.
- 5. Add the nuts if desired.
- 6. Pour into a greased 9X5 inch loaf pan and bake for approximately 1 hour or until a toothpick or knife inserted comes out clean. Enjoy!

- Heat oven to 375°F. Spray 13x9-inch (3-quart) glass baking dish with cooking spray. Peel, halve lengthwise and seed squash; cut into 1/2-inch-thick slices. Arrange with slices overlapping slightly in bottom of baking dish.
- In 2-quart saucepan, melt butter over medium heat. Reduce heat to low. Add garlic; cook 2 to 3 minutes, stirring frequently, until garlic is soft and butter is infused with garlic flavor. Do not let butter brown.
- In small bowl, mix bread crumbs, cheese and 1 tablespoon of the butter-garlic mixture.
- Brush squash slices with remaining butter-garlic mixture. Sprinkle with salt, pepper and bread crumb mixture.
- Bake uncovered 30 to 40 minutes or until squash is tender when pierced with fork. Increase oven temperature to 425°F; bake 5 to 10 minutes longer or until lightly browned. Before serving, sprinkle parsley over top.

BUTTERNUT SQUASH AND PEAR BREAD (QUICK)
I love a good pumpkin bread, but what I love even more is experimenting with different squashes in my breads. This can certainly be made with pumpkin, or acorn, or other squash. I planted butternut this year and had a bumper squash and I have a pear tree and together they made a beautiful bread! The addition of the pepitas (pumpkin seeds) adds an amazing depth to the bread.

- Preheat oven to 350.
- Grease one bread pan.
- Mix together all dry ingredients in a large bowl.
- In a separate smaller bowl, mix together wet ingredients except the pear.
- Peel and chop the pear in largish pieces.

- Add the pears in and fold carefully.

This recipe was originally designed to be made from either squash or pumpkin, after a few pour reviews, I discovered canned pumpkin to be too heavy, so I'm omitting the substitution of pumpkin puree. I make this bread every year and hope others with buttenut in their garden will give it a try.
