Sour Cream Toffee Fudge Cake image

Steps:

  • Preheat the oven to 350 degrees F.
  • Grease 3 (10-inch) cake pans with the 2 teaspoons of the butter. Line each with parchment paper and butter with 1/2 teaspoon butter. Set aside.
  • Place the cocoa in a bowl and slowly add the hot coffee, whisking until smooth. Set aside and cool.
  • In a large bowl, whisk together the sour cream and vanilla. Whisk in the cooled coffee mixture.
  • Sift the flour, baking soda, and baking powder together onto a sheet of waxed paper or into a bowl.
  • In a large bowl, with an electric mixer, cream the remaining pound butter and the sugar. Add the eggs 1 at a time, beating well after each addition. On low speed, add the flour mixture alternately with the coffee-sour cream mixture. Beat until glossy.
  • Divide the batter among the 3 prepared pans. Bake a cake tester comes out clean, 30 to 35 minutes. Let cool completely in the pans on a wire rack.
  • Remove the cakes from the pans and peel off the parchment paper. Using a long serrated knife, trim off the rounded top from each to make a flat surface. Place the first cake layer on a cake plate or stand. Spread about 1 1/2 cups of the chocolate icing across the top, out to the edge of the cake, and sprinkle with about 3/4 cup crushed butter toffee. Repeat with the second layer and another 1 1/2 cups icing and 3/4 cup crushed toffee. Place the third layer upside-down on top. Frost the top and sides of the cake with the remaining icing, and press the remaining crushed toffee onto the sides and top of the cake. Serve.
  • Combine the cream, butter, cocoa, and corn syrup in a large saucepan, and bring to a simmer over medium heat. Remove from the heat.
  • Put the chopped chocolate in a large bowl. Add the hot cream mixture and let sit for 2 minutes, then whisk until the chocolate is melted and smooth. Add the vanilla and almond extracts and whisk to blend. Cover and refrigerate until needed. (The icing will keep refrigerated for up to 3 days.)
  • Line a baking sheet with parchment or wax paper.
  • Combine the butter, granulated sugar, brown sugar, and cream in a medium heavy saucepan and cook over low heat, stirring occasionally, until the sugar dissolves. Continue to cook until the mixture reaches 300 degrees F, or the hard-crack stage (a drop of boiling syrup immersed in cold water crackles).
  • Remove from the heat, add the vanilla, and stir. Pour onto the prepared sheet and let cool completely.
  • Crack the toffee into large shards with a rolling pin. Place the pieces in a large deep pot and break into smaller pieces with the end of the rolling pin. Store in an airtight container until ready to use.

  • Using plastic wrap as aid, press mixture onto bottom and up sides of 9-inch-diameter springform pan.
  • Freeze 15 minutes.
  • Bake crust until golden, about 12 minutes.

  • For ganache: Bring cream and corn syrup to simmer in medium saucepan.
  • Remove from heat.
  • Add chocolate; whisk until melted and smooth.

  • Reserve half of chopped candy; bars for topping. Sprinkle remaining chopped candy bars in bottom of an ungreased 10 inch springform pan; set aside.
  • Combine coffee ice cram and rum; spread ice cream mixture over candy bar layer. Cover and freeze until firm.
  • Arrange pound cake slices over frozen ice cream layer; cover and freeze until firm.
  • Place chocolate in top of double boiler; bring water to a boil. Reduce heat to low: cook until chocolate melts, stirring occasionally. Remove from heat, and stir in almonds. Spread mixture over frozen pound cake layer; cover and freeze until firm.

Steps:

  • Heat oven to 375°F (350°F for dark or nonstick pans). Line bottoms only of two 13x9-inch pans with foil or waxed paper; spray with baking spray with flour.
  • In large bowl, beat eggs with electric mixer on high speed about 5 minutes or until thick and lemon colored. Add cake mix, water and oil; beat on low speed 30 seconds, then on medium speed 2 minutes, scraping bowl occasionally. Place half the batter (about 2 1/2 cups) in each pan. Spread batter slightly higher in corners than at the center.
  • Bake 13 to 17 minutes or until cake springs back when lightly touched in center. Run knife around edges of pans to loosen cakes if necessary. Turn each cake upside down onto clean kitchen towel each sprinkled with 1 tablespoon powdered sugar; carefully remove foil. Cool completely, about 45 minutes.
  • In medium bowl, beat 3/4 cup of the whipping cream on high speed until stiff peaks form; set aside. In another medium bowl, beat cream cheese and 3 tablespoons powdered sugar on medium speed until smooth; set aside.
  • In small microwavable bowl, microwave baking chips and 2 tablespoons whipping cream on High 30 seconds; stir. Microwave 15 to 30 seconds longer; stir until chips are melted. Stir melted chips into cream cheese mixture. Add whipped cream and toffee candy to mixture; stir until well blended. Cover; refrigerate at least 1 hour.
  • Trim edges of cakes to make even. Cut each cake in half lengthwise. If necessary, trim top of layers to make flat surface. Place 1 cake piece on serving platter; spread with one-third of the filling (about 3/4 cup). Repeat layers twice. Top with remaining cake piece. Gently press in sides to straighten; if necessary, trim sides until even. Cover; refrigerate 30 minutes.

If you are not planning to use it all at one time (party or large family) I would recommend replacing the whipped cream frosting with one that will be stable for a longer time but do still add the 1/2 tsp of instant coffee to it. Prep time includes making and assembeling the cake.

6 Layer Toffee Torte image

Steps:

  • Preheat oven to 350:.
  • Grease and flour 3, 8 inch cake pans.
  • In large bowl, combine flour, sugar, margarine, buttermilk, cocoa, baking soda, vanilla, salt and eggs.
  • With mixer on low, beat just until mixed, scraping sides with spatula.
  • Add coffee to bowl.
  • Increase speed to medium and beat 2 minutes.
  • Pour batter into pans.
  • Bake 25-30 minutes.
  • Cool cake in pans on racks, 10 minutes then remove from pans and cool completely.
  • While cake is cooling, chop Heath bars, reserve 2/3 of the heath bar.
  • In a cup, dissolve 1/2 tsp instant coffee with 1 tsp hot water.
  • Cool.
  • With serrated knife, cut each cake in two, making 6 thin layers.
  • In a bowl, beat whipping cream, brown sugar and cooled 1 tsp of coffee until stiff peaks form.
  • TO ASSEMBLE CAKE:.
  • place 1 layer on plate; spread with 1/2 cup whipped cream.
  • Sprinkle with 1/5 of the remaining Heath bar.
  • Repeat layers 4 more times.
  • Top with last layer of cake.
  • Thinly spread whipped cream over top and.
  • sides of cake.
  • Gently press reserved 2/3 of the Heath toffee onto top and sides of cake.
  • Refrigerate until ready to serve.
