Steps:

  • Fry bacon slices until crisp.
  • Add potato.
  • Cook on medium heat for 5 minutes.
  • Add drained can of cut green beans.
  • Season to taste.
  • Add 3/4-cup water and cover.
  • Cook on medium low heat for 20 minutes.

1 (16 ounce) can cut green beans
2 slices bacon, cut in half

CAJUN-STYLE GREEN BEANS WITH TABASCO

A recipe I found on the floor of a department store while shopping. The Mcllhenny Company, they of celebrated Tabasco fame, included for promotion a free recipe with the purchase of a men's necktie. I have been making this every Thanksgiving for close to ten years now. Can be made vegetarian with the use of vegie soysage or "facon."

Cajun-Style Green Beans With Tabasco image

Steps:

  • Steam the green beans until just done but still maintaining their bright green color. Drain. Keep warm.
  • In the meantime, in a small pan over medium-high heat cook the salt pork or bacon until crisp. Reserve the fat. (If using vegetarian bacon, you'll need to add a bit of oil to the pan for frying.).
  • Reduce heat, add the minced celery stalks and cook about 2 minutes; adding the garlic and cooking another minute longer. Stir in vinegar, Dijon mustard, sugar and TABASCO sauce. Heat through.
  • Remove from heat; stir in celery leaves.
  • Toss with beans to coat. Season with salt and pepper and adjust seasonings if necessary.

1/2 teaspoon tabasco red pepper sauce
1/4 cup minced celery rib
1/4 cup chopped celery leaves
salt & freshly ground black pepper

Steps:

  • Place green beans on a double thickness of heavy-duty foil (about 18 in. square). Sprinkle with Cajun seasoning and dot with butter. Fold foil around beans, sealing tightly., Grill, covered, over medium heat 9-11 minutes on each side or until beans are tender. Open foil carefully to allow steam to escape.

Found at a cooking-by-country (or region) website, just reading this recipe took me back decades to a time growing up when we would pick beans from the garden & cook them until soft w/a combo of onion w/ham or bacon. I never cared when the main-course was as long as I could have a HUGE plate of those green beans. If it was my choice to make, I would definitely dbl this recipe! Enjoy!

Louisiana Green Beans (Creole Recipe for ZWT-9) image

Steps:

  • Heat oil in a frying pan. Add the bacon, onion, garlic plus parsley & sauté until onion is soft & golden brown.
  • Add the beans, salt to taste preference & Creole seasoning. Reduce heat to low & cook gently for about 30 min or until beans are soft (Add a sml amt of water if needed to keep the beans from sticking to the bottom of the pan.
  • HINT: Try pairing these beans w/my also newly entered Creole Meatloaf recipe & your favorite thick mashed potatoes. Yum!

  • Cook beans according to package directions. Meanwhile, in a skillet, cook bacon, onion and green pepper over medium heat until bacon is crisp and vegetables are tender. Remove with a slotted spoon., Stir the flour, brown sugar, Worcestershire sauce, salt, pepper and mustard into the drippings until blended. Stir in tomatoes.
