CAJUN SWEET DOUGH

Down in Louisiana this dough is used to make what we call Cajun Sweet Dough. The traditional filling is fig and it is made into turnovers, but it can also be used as pie crust, although it is not as flaky. It is supreme as turnover dough, for ANY kind of filling.

Steps:

  • Sift together the flour, baking powder, and salt. Set aside.
  • In a separate bowl, beat the butter, then add the sugar a little at a time. Add the vanilla. Beat the mixture until it is nice and fluffy. Beat in the egg. Stir in the flour mixture alternately with the milk.
  • Before you use this dough, be sure you chill it well at least 2 hours or even overnight.
  • To make turnovers: Preheat the oven to 350 degrees F (175 degrees C). Roll dough out to 1/4 inch thickness on a lightly floured surface. Cut into 3 inch squares. Spoon about 2 teaspoons of the pie filling into the center of each square and fold over to form a triangle. Pinch the seams to seal or press with the tines of a fork. Place at least 2 inches apart on a greased baking sheet. Brush with egg white.
  • Bake for 12 to 15 minutes in the preheated oven, until golden brown on the tops and bottom.

Steps:

  • Preheat the oven to 400 degrees F.
  • Put the potatoes in a medium pot and cover with water. Bring water to a boil over medium heat and cook until soft, approximately 20 minutes. Use a fork to pierce the potato to see if it is tender. Drain the potatoes and let to cool.
  • When the potatoes are cool enough to handle, peel off the skin. Cut the potatoes into large chunks and add to a mixing bowl. Mash with a potato masher or fork. Add the sugars and mix thoroughly. Stir in the lemon zest, ground almonds, cinnamon, anise extract and honey.
  • Roll out 1 of the pastry sheets on a floured cutting board. Using a 3 to 3 1/2-inch biscuit cutter, cut out as many circles of the dough as possible. Put a dollop of sweet potato filling on each circle, then fold the circles in half to form a half moon. Press the edges together with a fork to seal and arrange on sheet tray lined with parchment. Repeat with the remaining pastry sheets and filling. Brush the top of each turnover with beaten egg.
  • Bake until golden brown, approximately 15 minutes. Remove and allow to cool for 5 minutes. Arrange on a serving platter, dust with powdered sugar and serve.

2 pounds sweet potatoes, whole and unpeeled
1/4 cup granulated sugar
1/4 cup brown sugar
1 lemon, zested
2/3 cup whole blanched almonds, ground in food processor
1 teaspoon ground cinnamon
1/2 teaspoon anise extract
1 tablespoon honey
4 sheets frozen puff pastry, thawed
1 egg, beaten
Powdered sugar, for dusting

CAJUN PORK CHOPS

This is a recipe I am transferring here from an old handwritten recipe card. I have no idea where it came from, but I have made it many times over the years and we really like it. (There are several recipes for Cajun pork chops here, but the dry rub mixture in this recipe has different ingredients.)

MAQUE CHOUX

This classic Cajun side dish is a sweet, hot, juicy, milky, buttery combination of corn, onions and peppers. It's often cooked in rendered bacon fat and enriched with heavy cream, but this version relies upon only butter and a little water in their place, which allow the ingredients' flavors to sing more clearly. While it is commonly understood that Fat Equals Flavor, there is a point at which too much fat actually masks complexities in flavors and dulls their vibrancy. Try the maque choux this way and see if you notice how bold and lively it tastes. If you miss the smokiness that bacon imparts, try instead a pinch of smoked paprika stirred in at the end.

Steps:

  • Working with 1 corn cob at a time, set the ear of corn upright in a medium bowl. Shave the corn from the cob by slicing down the sides using the tip of a sharp chef's knife, holding the knife almost vertical. (This gives you neat tablets of corn that land squarely in the bowl and keeps the kernels from scattering all over the counter.) Using the back of the knife, scrape each cob to release all the nibs and the "milk" of the kernels into the bowl. Repeat with remaining ears of corn, then snap the cobs in half, and add them to the bowl.
  • In a large, deep sauté pan, melt 3 tablespoons butter over medium heat until foaming. Add onion and celery, and season with 1 or 2 pinches of kosher salt. Stir constantly until softened and translucent but not browned, about 5 minutes.
  • Add 2 tablespoons butter and the bell pepper, poblano and serrano, and stir constantly, adding another pinch of kosher salt, letting the butter melt and the peppers soften and become translucent, about 2 or 3 minutes. You will smell the peppers' sweetness and their mild capsaicin releasing.
  • Add the final 3 tablespoons butter and the corn mixture from the bowl, cobs included, and another pinch of kosher salt. Stir constantly to coat with the butter and combine thoroughly.
  • When everything starts to hiss and sound hot, but isn't cooking so hard as to take color, add 1/2 cup water and a healthy few grinds of black pepper, and cover the pan for a couple of minutes to steam/shallow braise the mixture.
  • Remove the lid, and stir well, noticing the corn releasing its liquid and the kernels softening, and the cobs turning somewhat translucent, if however vague. You will notice a general softening and melding together. Return the lid, and let cook a few more minutes, noticing the water evaporating and the remaining liquid reducing and gaining some "body" and gloss. Discard the corn cobs, but do suck them before tossing - those buttery juices make a nice cook's treat.
  • Taste for salt, and serve. It should be sweet, spicy, a bit wet and surprisingly complex, given the few ingredients and their ordinariness. If you want a smoky taste, add a good pinch of smoked paprika.

3 fresh ears of corn, shucked
8 tablespoons unsalted butter (1 stick)
1/2 red onion, cut into small dice
2 celery ribs, cut into small dice
Kosher salt
1 red bell pepper, cored, seeded and cut into small dice
1 small poblano pepper, cored, seeded and cut into small dice
1 small serrano chile, very thinly sliced
Freshly ground black pepper
Smoked paprika (optional)

  • Authentic New Orleans Gumbo. I’m pretty sure we stepped off the plane and made a beeline for the nearest restaurant on our first trip to New Orleans.
  • Cajun Chicken Pasta. We’ve all seen Cajun seasoning before, and maybe you’re wondering what that actually means. Cajun seasoning is a blend of paprika, cayenne pepper, garlic powder, onion powder, some herbs, salt, and pepper.
  • Red Beans and Rice. Red beans and rice is known in New Orleans as Monday night dinner. That’s the night they eat this dish and do laundry. But don’t worry, you can eat it whenever you like!
  • Cajun Shrimp and Grits. If you’ve ever had grits and decided you hate them, you must not have had the right kind. I promise; follow this recipe, and you’ll be wondering how you went so long without them.
  • Jambalaya. Jambalaya is a beautiful rice dish based on Spanish, French, and certain African cuisines. In fact, they’re so close; I once started to make paella and ended up with jambalaya.
  • Smothered Chicken. This recipe gets its name from the fact that the chicken is absolutely smothered in creamy gravy. Every bite is better than the last, and this one-pot meal is worth every calorie.
  • Louisiana Deviled Crab Cakes. One bite of these, and you’ll throw out your old recipe. Crabmeat has terrific texture and not a lot of flavor, but in this recipe, it gets elevated by some fantastic additions.
  • Smothered Cabbage and Potatoes. If you’re on the lookout for a cheap, filling, delicious side dish, this one’s for you! Cabbage and potatoes are about as economical as they come, and better yet, they’re hearty, warm, and super easy to season.
  • Cajun-Style Fried Deviled Eggs. You’ve had good deviled eggs, and you’ve had bland deviled eggs, but I bet you’ve never had crunchy, fried deviled eggs.
  • Spicy Cajun Dipping Sauce. If you’re anything like me, you have a fridge door full of condiments. I just love having a variety of sauces on hand to make a fast dinner even better.
