Steps:
- Preheat oven to 325°. In a large skillet, cook beef and onion over medium heat until beef is no longer pink, 5-7 minutes, breaking up beef into crumbles; drain. Stir in remaining ingredients. Transfer to a greased 2-qt. cast-iron pan or baking dish. , Bake, uncovered, until the beans are as thick as desired, 45-60 minutes.

This casserole is the best! I take it to pot lucks, picnics, camping trips, etc.

Steps:
- Preheat oven to 350 degrees F (175 C).
- Place bacon and ground beef in a large, deep skillet. Cook over medium high heat until evenly brown. Drain and set aside.
- In a four quart casserole dish, mix together the bacon, ground beef, pork and beans, kidney beans, butter beans, lima beans, ketchup, onion, vinegar, dry mustard and celery.
- Cover and bake for 1 hour.

CALICO DIP
This is a favorite for family get-togethers. It goes back over 20 years because our mother, now deceased, made it way back when. You can make it light by using all low fat ingredients or use full fat versions. We have a large family and usually have to double or triple the recipe.

- Combine cottage cheese, sour cream, and mayonnaise. Add in sugar (if using), salt, minced garlic, and all the veggies. Stir well and refrigerate for at least an hour to blend flavors.
- Serve with celery sticks, carrot sticks, or any other veggie dippers -- great with potato chips too!

CALICO WILD RICE SOUP
This is a very hearty and flavorful soup, I do believe all will enjoy it!!

Steps:
- In a medium sauce pan cook rice in 6 cups water until cooked through and tender.
- In a large saucepan or stock pot combine broth, cooked rice, corn, green onions, red and green bell pepper, parsley and tarragon. Mix well and cook over medium heat until mixture boils. Reduce heat and simmer 5 minutes or until corn is tender.
- In a small bowl, mix cornstarch and water. Add to soup mixture and cook for 5 minutes. Stir occasionally and serve once soup has thickened.

There are many taco bean dips, but this one has a secret ingredient that makes is extra yummy...mayonnaise. It gives it a very creamy taste. Try it... bet you will like it!

- In a bowl, mash the avocados and mix in the lemon juice. In a separate bowl, mix the sour cream, mayonnaise, and taco seasoning.
- Spread the refried beans over the bottom of a large serving platter or bowl. Top with avocado mixture. Spread sour cream mixture over the avocado, and sprinkle with cheese. Layer cheese with green onions (just the green part), then tomatoes, and top with the olives. Cover, and chill in the refrigerator 2 to 4 hours before serving.
