COCONUT CHERRY BARS
Take a break from chocolate and make these cheery cherry bars.

Steps:
- Heat oven to 350°F. Grease 8- or 9-inch square pan.
- In medium bowl, mix 1 cup flour, the butter and powdered sugar with spoon until flour is moistened. Press mixture in pan. Bake 10 minutes.
- In medium bowl, beat eggs. Stir in remaining ingredients. Spread over baked layer.
- Bake 25 to 30 minutes or until golden brown. Cool completely, about 30 minutes. For bars, cut into 6 rows by 5 rows.

CHERRY CHOCOLATE NUT BARS RECIPE
Cherry chocolate nut bars are the perfect treat. They have all of the crunch along with sweet and chewy marshmallow textures.

Steps:
- Melt chocolate chips and peanut butter on low in the microwave. Stir well and add the chopped peanuts. Spread half of this mixture in a 9 x 13 inch glass pan sprayed very lightly with non stick cooking spray. Place in fridge to set up.
- Melt marshmallows in the microwave on very low stirring every 20 seconds. When melted and smooth, stir in the frosting.
- Spread this mixture carefully on top of the chocolate layer. Let cool in the fridge.
- Top with remaining chocolate for the last layer. If it has set up a little, just microwave it for about 30 seconds and stir well. Be sure to spread each layer to the edges of the pan.
- Refrigerate until firm. Cut into pieces - about 48.
- Store in refrigerator.

- Preheat oven to 350 degrees F (180 degrees C).
- Mix together flour, white sugar and butter or margarine. Mix until crumbly. Press into a 9 x 13 inch pan. Bake for 20 minutes or until lightly browned.
- Beat eggs, sugar, salt, baking powder, and vanilla. Drain and chop cherries, reserving liquid. Stir chopped cherries, nuts, and coconut into egg mixture. Pour on top of crust.
- Bake 25 min. Cool.
- Combine 1 teaspoon butter and 1 cup confectioner's sugar with enough liquid from cherries until spreadable. Frost bars. Sprinkle with coconut when icing is set.

CHERRY NUT BARS
From Land o' Lake. I think it is unique because of the marshmallows in it. You don't really taste them (in fact everyone surprised when I said they were in there) but they add a wonderful creamy note that compliment the cherries beautifully. The oats in the more traditional shortbread crust is an excellent addition also.

- In large mixing bowl, mix flour, oats, sugar, pecans, baking soda and butter.
- Mix at low speed until crumbly.
- Reserve 1 1/2 cups of mixture for topping; press remainder into bottom of 9 x 13-inch baking pan.
- Bake at 350°F 12-15 minutes.
- Spoon pie filling evenly over crust.
- Sprinkle marshmallows and remaining crumbs over top.
- Return to oven 25 to 35 minutes more, or until topping is golden.

- Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking pan.
- In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the egg and vanilla. Combine the flour, baking powder and salt; stir into the creamed mixture. - In a 4 quart saucepan, combine the sugar, whipping cream, milk, corn syrup and salt. Stir to combine then cook over medium heat, not stirring, until it reaches 240F on a candy thermometer.
- Pour the mixture into an ungreased 9×13-inch baking dish. Do not scrape the saucepan! Allow the mixture to cool until the bottom of the dish is just barely warm. Add the cherry oil and the food coloring, and using a wooden spoon, start to stir the mixture. It will be easy to stir at first, then the mixture will start to become creamy and harder to stir. Continue to stir until the mixture loses it’s shine. It will start to resemble a thick frosting. This will take anywhere from 15 minutes to 45 minutes.
- Using your hands, for m the mixture into 1-inch balls. Place on a lined baking sheet. With your fingers, lightly press down on the top of the balls. (This will make them easier to dip).
- Melt the chocolate according to the package directions. Stir in the chopped pecans, then dip each of the centers into the chocolate/nut mixture. (I find that using my hands and a fork is the easiest way to do this.) Transfer to a waxed paper lined baking sheet to allow the chocolate to set up.
